What do you do with zucchini?

It"s that time of year. Zucchini everywhere. You find it on the porch when you come home. The neighbors are afraid you will say no so they just leave it!
I've cubed it with new potatoes and roasted it with salt, pepper and garlic.
What else? I grew up with it being breaded and fried or made into "bread". Both are too high cal, so any ideas?

throw it in a pan with onion, garlic and whatever veggies you've got on hand, cook up some brown rice (or pasta if you can have it...how i miss angel hair pasta) and it will be delicious....0

I've always just sliced it up and eaten it! When the kids were little, I'd cut up those and squashes and we called them vegetable cookies.0

Grilled is yummy and stir fry is great too. Steamed is also great!
Zucchini is also very good raw!

Mix it with some squash, cherry tomatoes, parmesan and quinoa pasta, for a nice and fresh pasta primavera. Yum!0

I LOVE it sauteed in a pan plain with mushrooms. mmmmmmmm! The mushrooms add a perfect flavor to it.0

I like it cooked and whatever you do with a mushroom or a pepper you can do with a zucchini.0

I put my in the oven for about 7 mins with some squash brush with olive oil some garlic pepper and lemon juice wowsers good!0

We make (our favorite) Zucchini, Bacon, Blue Cheese soup! Soooo delicious but not exactly, um, lo-cal. Hearty and delicious, though, makes a solid meal...probably could be modified to be healthier. Happy to pass on the recipe if you want it.0

I add zucchini to my meatloaf. My kids don't care for it, so it gives me a way to add an extra veggie to their meal.0

The quinoa idea is great...I just bought some for the first time today and have been trying to come up with some ideas for its use.0

Slice them toss them in olive oil and garlic, sprinkle with a little parmesan cheese and layer on a baking tray - bake them until they just start to get a little brown/crispy. MMMMmmmm!! Sooo good!0

Carrot and courgette/zucchini muffins. Yum. Even the kids like them.0

My most recent thing that I did was cut it in 1/2 inch slices and threw them in a pot of pasta sauce. Once they are tender, they taste like the sauce. It was quite yummy. With a cup of pasta and the entire zuchini, along with a salad, the meal is pretty decent on cals.0

I also slice it up and throw it, along with some bell peppers and onions, into scrambled eggs. Great way to to get a hearty dose of veggies in, first thing in the morning.0

LOL, I've never heard of anyone PAYING for a zucchini...in my neighborhood growing up they literally WERE left on people's doorsteps - and they were usually the size of footballs!
On the plus side, one zucchini that size makes about 4 loaves of zucchini bread...YUM.0 -

I shred it and add it to lean ground turkey with some reduced fat cheddar and red onion and make that into turkey burger pattys and grill em up!0

i put it in my meatloaf.
cut it up thick and sprinkle it with parmesean cheese and bake it.
shred it and use it in a slaw with yellow squash (however you do that ihave no idea, it just sounded good)0
