I make it about 180 calories for half the recipe just the fritters if you use spray oil.0 -
I use it, along with mushrooms & spinach, to make vegetable lasagna. Just use your favorite lasanga recipe and use the veggies in place of the meat.0

Zucchini Chips:
Slice into 1/4 inch slices
Dip in skim milk and then into reduced fat bread crumbs
Sprinkle with a bit of parmesan
bake on 400 ( I use a vented pizza pan so I don't have to flip them; but otherwise I would turn them over after about 5 minutes) until brown and crispy on the edges
Serve with Marinara for dipping
My husband and I LOVE these and it is an easy way to get my four year old to eat her veggies.

Where do you people live that the zucchini god's have blessed you so?! I want to move in!
Zuchinni/squash are possibly the easiest veggie to grow. The only problem is the size of the plant and keeping the thing picked (the plant will stop putting on if you leave the fruit to get too pick). Here is western Kentucky they get out of hand quick about this time of year.0 -
oh I love zucchini! sauteed with onion then add to scrambled eggs, chopped into red sauce then add whole grain noodles, chopped small into country meatloaf, grilled... it's almost no calories and so yummy.... use it! Adds nice bulk and crunch to almost everything.0

I dice mine up and add it to spaghetti sauce. Also if you cut it length wise and hollow it out you can add browned ground turkey and parm cheese bake until soft. So good.0

Here in Missouri (and I'm sure other places too) zucchini and many other fruits/ vegis get left on your porch from neighbors who have overflow. I didn't get a garden in this year (very wet spring, just wasn't free on a dry day to get the tiling done), so I'm really hoping someone will leave me some jalapenos! I miss having them fresh.
I know what to do with them, calories be darned, stuff them with cream cheese, sharp cheddar and bread them and bake 'em up!! Anyone in MO have some??? lol0 -
I shred it and add it to lean ground turkey with some reduced fat cheddar and red onion and make that into turkey burger pattys and grill em up!
that sounds goooood!! used the last of the turkey today so I'll have to get some for this0 -
I love to grill it on the bbq, then let it marinate in some balsamic vinegar for a while. Then I'll just add those to burgers, sandwiches ect. Yum!0

Bump. I have 4 zucchini plants in my garden (among other things) and they grow like nuts up here (near Chicago). Just picked my first zucchini, and I think it might find its way into a big plate of whole wheat pasta tonight - yum!0

Sounds odd, but if you shred it and add it to oatmeal with lots of cinnamon and a touch of maple syrup and/or brown sugar it tastes similar to zucchini bread. One of my favorite ways to do my oatmeal.0

I add it to multi-colored peppers, red onion and taco seasoning and make fajitas. I also saute with red onions and add some cream cheese at the very end, it is really good.0

Use a vegetable peeler to get super thin slices, and throw in a salad!

Here is my favorite thing to make and it is GOOD for you!
I cook up 2lbs Extra Lean Ground Turkey until cooked through. Then Add sliced zucchini and mushrooms to pan. Put lid on for about 5 minutes. Then done! I like my zucchini to be a little crunchy if you do not cook longer once the veggies are in the pan. The zucchini and mushrooms give this an awesome flavor.0 -

It must be a Midwest thing where people leave it on your doorstep...they do the same here in Southern Indiana too. My fave way to eat it is raw with Hidden Valley Light Ranch. Here is another awesome recipe:
Heat olive oil or 2T butter, and either garlic or garlic powder in pan.
Slice zucchini, squash, mushrooms(opt.), and turkey smoked sausage in skillet.
Cover, stirring frequently, until meat is browned and veggies tender.0 -

You have to try this! It may sound kind of weird, but it's SO good, and enough to satisfy any pizza craving. I haven't really seen any of the big round zucchinis around here, so we've just used regular zucchini sliced length-wise and it works out great.0 -
Make a pasta primavera with it, some mushrooms, diced tomato onion and garlic. Saute in olive oil and add WHOLE WHEAT pasta or brown rice. If it wasn't for the fact I just made a pot of chicken tortellini soup I'd be heading for the kitchen to make some!0

Also, you can slice it lengthwise and thin and toast it like above then top it like mini pizza's with (good low cal toppings of course) like veggies and maybe turkey pepperoni. It really is so good.0 -

Dehydrate it and make chips for snacks or stuff it with ground turkey, tomatoes, corn, (any combination you would enjoy) and throw it in the oven.0
