Not really recipes lol, but I love mushrooms just grilled with a little Montreal steak seasoning...

Also like to take sliced mushrooms and dip into picante sauce instead of using chips

Love mixing grilled mushrooms cut up into a fajita bowl

Love stuffing mushrooms and cheese into a pablano pepper to make grilled chile rellenos... can also stuff with chicken as well or beef or steak

Mushroom risotto using both fresh chestnut mushrooms and dried porcini mushrooms

    Stroganoff

    Mushroom rice

For breakfast, a roast portabello with a poached egg on top

I put them in everything and anything - they are great to bulk up a recipe without adding very many calories. Chili, pasta, soups, stews, raw with dips, sauteed in some beef broth with steak or other meats, mixed into meat loaf - I love them all ways. I especially like cremini for their versatility.

I love mushrooms and find them extremely satisfying. I saute them with two cups of spinach at lunch when I work from home. I put them in my omelettes (with spinach again), and I am trying a spinach, artichoke, mushroom dip pizza thing next week. I don't think I've ever met a mushroom I didn't like. I use them to help bulk up other meals (like chicken + peppers + mushrooms) because they just don't eat into calories that much and are so, so satisfying. I wish I was better working with portabellos. Perhaps I'll grab a few and put some eggs in there.

Yes! Chanterelles, chicken of the woods and morels are delish, too.
