Eggs in your diet

I've had a gastric bypass over 20 years ago, but still have problems eating meats. I eat very minimally any red meats or really any meat whatsoever that is not ground or I chew very very well as it will clog my stomach outlet. I have started eating 2 boiled eggs per days, one in the morning and one on a salad at night to add in protein at night. Just throwing this out and see what people think about eating 2 eggs a day.

I love eggs!!! Have you tried egg muffins? You can use regular eggs or egg substitute like egg beaters and save a few calories. There is a blog called "The World according to Egg Face" and she has awesome egg muffin recipes and just recipes in general for people who had WLS. Check it out of you need some variety.

I eat eggs just about every day too. Hard boiled on my salads and for breakfast I will scramble or cook one in my stone wave cooker for a sandwich. Love eggs!

I eat eggs almost every day :) I have a small flock of chickens in my front yard (I live in a tiny tiny rural community). I eat hard boiled eggs as a quick snack or soft boiled/poached/over easy for breakfast or an omelet for any meal! And when we are overrun with eggs, they sell quickly to friends and family! My dietician and doctor both think they are a great source of protein.

I consume anywhere between 6-12 eggs (or egg whites) daily. They're a fantastic source of protein.
