Sure - I use Guy Fieri's Prime Time Pizza Dough recipe. For the recipe, I divide the dough into 6 servings. Then I just roll the dough pieces out to about the size of a plate (maybe a little smaller) and fill with whatever filling sounds good. (Obviously, any meat is pre-cooked.) Then I fold the dough over the filling, use a fork to seal the edges, make slits in the dough for steam and bake at 450 for 12-15 mins.
Once baked, I let them cool, wrap in plastic wrap and freeze. (I group the similarly filled ones into ziploc bags and label). When ready to eat, wrap the piece in a paper towel and microwave on high for about 2 mintues from frozen or 30 seconds to a minute from thawed.
I got the idea off of pinterest. There are all kinds of recipes for homemade hot pockets on there.
Do you know,roughly, how many calories each one is?
It really depends on the fillings. The Taco one was the highest at 636 and the pizza one was the lowest at 424. the BBQ chicken one was around 577 and the Ham, Cheddar and Broccoli was 473.
I should also mention that I roll my dough out pretty thin so I can get more filling. By the time it is said and done, these are about the size of two "traditional" hot pockets put together.2 -

It is all about planning and making choices. If I know I want to eat X, then I either save up the calories for X or workout until I have enough calories for X. Same goes for special events, holidays, birthdays, etc. Personally I go off a weekly calorie goal, as opposed to a daily calorie goal. That way I can plan easier for Friday night pizza night or little indulgences here and there.5 -

Eight ounce grassfed (85%) beef patty, 3 slices of applewood-smoked bacon, 2 oz. Kerry Gold aged cheddar, 1/2 cup sauteed shiitake mushrooms, 1.5 cups organic spring mix, cherry tomatoes, 1 Tbsp 365 Herbes du Provence dressing.

Fridays I tend to have 90% of my calories as one late lunch/early dinner meal. This week was pork sirloin roast with balsamic cherry sauce, a side of sauteed kale with pine nuts, feta, and Grana Padano with a balsamic reduction, and lastly polenta with sauteed mushrooms, caramelized onions and honey chèvre.
