Not to be basic, but I LOVE pumpkin. It's kind of grown on me the past few years. Pumpkin used to be something I did not care for in large quantities (I would have two bites of pumpkin pie on Thanksgiving and I would be set until the next year). However, it started to grow on my a ton. So amazingly good and I'm finding myself looking for more tried and true recipes. I have a Pinterest board dedicated to pumpkin as well.

Last week I shared a recipe on here for my amazing 3 ingredient pumpkin muffins.

In the past week, I also made a skinny pumpkin spice latte and skinny (?) pumpkin spice Popsicles!

Skinny pumpkin spice latte:
-two cups almond milk (unsweetened vanilla)
-2 tablespoons canned pumpkin
-1 tsp sugar (add more or less to taste)
-vanilla extract (honestly I just pour a little in)
-pumpkin pie spice
-4oz extra strong coffee (I used some cold brew I had leftover)

Combine milk, pumpkin, and sugar in a sauce pan and simmer until it gets hot. Add everything else. It made me a GIANT travel mug of this amazing pumpkin spice goodness and only 123 calories for the whole thing!

Skinny pumpkin spice Popsicles:
(Measurements are weird cause I adapted a recipe for 8 Popsicles originally to be 6 Popsicles)
-1 1/2 cups fat free half and half
-3/4 cup canned pumpkin
-1/2 cup smashed reduced fat vanilla wafers
-2 tablespoons sugar
-1/4 tsp pumpkin pie spice

Mix and pour into 6 Popsicle molds and freeze. Mine were about 100 calories each!

Ok your turn: what is your favorite pumpkin recipe?
