Well I grew up in France, so... gimme all the cheese.
This stuff was my favorite.

I just introduced hubby, who likes cheddar & bleu to Huntsman which is Gloucester & Stilton molded together. He was in love.0

I actually tried a cheese recently I was not a fan of - Red Dragon. I don't want to say it was bad, but it had little flexibility. With the mustard included, it was good for sandwiches, good for stand-alone, but not much else (like omelettes).0

Pretty much anything but goat cheese (nasty nasty stuff) is good with me!0

Chèvre - pretty much any flavor variation. One of the most recent ones I had was a honey chèvre from Trader Joe's.
Smoked Gruyère - I use it in grilled cheese sandwiches and a macaroni and cheese that's to die for.
Cranberry Wensleydale - on crackers as a snack.
Yancey's Fancy Steakhouse Onion Aged Cheddar Cheese - I have to be very careful with this stuff. So good. I can cook with it, but it usually ends up in my mouth, naked, in pieces. LOL
I think I need to stop there. I'm starting to drool and the cats are giving me a funny look.1 -

No shout-outs for Blue Stilton? I like blue cheeses, but I prefer them creamy and I draw the line at Roquefort. That stuff will take your head off!
Also Camembert, and Raclette. And obviously goat's cheese.
The beauty of a strong cheese is that, energy-dense though it is, you won't have too much. Unlike a nice block of mature cheddar, which I could snaffle in a heartbeat.1 -

Nokkelost on pumpernickel is my weakness, but it's almost impossible to find anymore. Leyden is close, but just not the same.0

ALL THE CHEESES! Seriously, I haven't met a cheese I didn't like (and that includes Dairylea triangles). Just need to find a nice crumbly Wensleydale to go with my Christmas cake.
A couple of years ago I went with my hubby to a cheese-tasting event. The server came round with a plate of cheese and said "this will serve six people". Nuh-uh, I could have eaten the entire thing on my own. Do you know how difficult it was for me not to grab the plate and run away with it?3 -

Day to day I'm more likely to eat swiss slices (yum!) or Bega light/tasty slices - which are pretty good for reduced fat cheese, mostly because it's easier to keep an eye on how much I'm eating. Oh and laughing cow is a regular snack of mine, though that's not really proper cheese.
We had Margaret River smoked at lunch time today on our camping trip. Had it a few times before. It's amazing!
