    Arugula, smoked salmon, beets, goat cheese (walnuts if you like).
    Greek - lettuce, red onions, tomatoes, cucumber, grilled chicken, feta (don't like olives)
    Steak - steak strips, blue cheese, lettuce, tomatoes, cucumbers
    Antipasto - lettuce, red onions, tomatoes, cucumber, chopped up slices of whatever lunch meat and cheese you like (I like ham and Swiss or ham and gouda, sometimes some salami)

    Taco salad - ground meet with taco seasoning, sauteed peppers and onions, beans, bit of cheese, lettuce, avocado, pico de galo, sour cream if you want.

    I always use red wine vinegar, Dijon mustard, and salt and pepper, for dressing (except for the taco salad, obviously).

    I really don't care for fruit or nuts on my salad though.

    But I got to try that cheeseburger salad.

    Do you cut up the roasted pumpkin into chunks? Sounds extremely good...

    Yes, dice the pumpkin up small and toss it in a bit of olive oil, salt and pepper, garlic powder and roast it in the oven (about half an hour seems to be enough). Allow to cool.

    Shredded chicken, baby spinach, cherry tomatoes, cucumber, capsicum, danish fetta, avocado and pine nuts. The soft, crumbly danish fetta and avocado coat the salad so you don't need extra dressing.

    I love the combination of blue cheese, leftover steak, tomatoes and romaine.
    or.. beets, blue cheese, asparagus, greens and balsamic dressing - I make my own.
    or.. romaine, chicken, black beans, roasted corn, tomato, avocado, cilantro - you could add peppers, but I don't like them and tortilla strips which are delicious but I don't have them in the house.. use a lime vinaigrette - lime juice, olive oil, cumin.
    I also like adding fresh herbs when I have them. Parsley is really good in almost any salad - adds a great flavor.

    dang..I might have to make a salad today.

    One big help to me has been keeping flavored tuna (in a pouch) at my desk for emergency salads! I like Spicy Thai tuna and Ranch tuna, added to whatever lettuce and vegetables I can find. It almost doesn't need dressing because it's full of flavor already.

    I get a bag of 50/50 spring mix and baby spinach and cherry tomatoes as my base. I add a sprinkle of different cheeses, something crunchy and random dressing.. today is tortilla strips, chicken breast, bolthouse ranch and some salsa...mexican cheese blend.

    I believe this dressing is both amazing in the taste department and pretty good for you, if you use fairly quality olive oil.

    1/2 C Olive oil
    2 tbsp balsamic vinegar
    1 tbsp red wine vinegar
    1 garlic clove, crushed (or minced)
    fresh herbs (I prefer thyme)
    Dijon mustard, 1 tsp
    Brown sugar, 2-3 pinches (go more or less depending on your sugar preference)

    I throw that on most of my salads, including my wife's amazing beet / kale salad (roasted beets, kale, spring mix, dried blueberries and/or cranberries, quinoa, goat cheese).

    I also like to make "man salads," which usually have grilled steak or chicken breast, bacon, bleu cheese, cherry tomatoes, cucumber, avocado, and spring mix.

    Those are my go-to salads for the week. When I eat salad, I am not afraid of eating a lot of fat and/or protein.

    I LOVE SALADS.

    My favorite salad of the moment:

    3-4 cups of arugula
    1-1.5 oz prosciutto
    1 heaping tbsp olive oil
    1 just under tbsp balsamic vinegar
    1 small/medium-sized apple, sliced or chopped
    1 tbsp burrata cheese
    salt
    pepper

    Top that ish with sliced almonds and you are in BIZ-NASS.

    SO. EFFING. GOOD.
