This morning I made a salad of watercress plus some roasted orange cauliflower and a bit of feta and put a couple of sunny side eggs on top. Highly recommended.0

I make a sweet potato hash. Sweet potato, onion, garlic, and pepper. I top a couple scrambled eggs on top. Yummy.0

Oh I also like to make sweet potato corn cakes. It has sweet potatoes, sweet corn, cumin, cayenne pepper, corn meal, egg and bread crumbs. So good! It makes alot!0

I make egg cups in cupcake tins. So easy and ready in 20 min at 350 degrees. Add anything you want. Eggs, veggie and cheese is my go to.0

I like my eggs over easy on top of brown rice or quinoa, plus whatever left over veggies I have in the fridge, beans, lentils, and sauce - lots of sauce!
That said, you don't need to worry about "good fats" like olives, olive oil, avocados, grass fed butter, grass fed animal fat, wild salmon with skin, sardines...
Bread has little fat usually - but lots of carbs. Unless you are going to go Keto / Paleo some carbs are okay just don't over do it.

Quinoa in bibimbap? Sacrilege!!!!
Also eggs are so incredibly versatile. Eat them with anything. Make a breakfast quesadilla with some tomato, onion, scrambled eggs and a dollop of sour cream or some queso cotija in a corn tortilla. Delicious
Bibimbap does literally mean "mixed rice". So substituting quinoa makes it another dish that is sort of like bibimbap. I'm thinking of making it for dinner tonight actually. Bibimbap with brown short grain rice, veg, egg and probably chicken.0 -

We've been eating dippy eggs for far longer than 40 years in Pittsburgh.2 -
My go to meal when I am hungry and dont want to cook much or have extra because its just me rye toast spread guacamole and salsa add a soft yolk egg and cottage cheese on top1

They don't have to be slimy, though - I like oatmeal, but not the texture. That's why I grind the oatmeal into flour and make a simple tortilla out of it. Same thing, only different...0 -
