How do you get in enough calories when eating such healthy foods?

If you reached your limit on healthy for the day a little unhealthy can get you where you need to be. Try weighing a quarter cup of almonds.

I have to "graze" all day and I am still 500 calories under. I drink a protein shake or eat almonds

Healthy does not equal low calorie. There are plenty of calorie dense "healthy foods", not that you need to restrict your choices to "healthy food".

Perhaps reconsider your food choices - losing weight shouldn't be about restricting foods or food groups. Sure, eat nutritious food most of the time, but you can still enjoy less nutritious options, just make them fit your calorie goal. Having a more balanced approach to food will probably allow you to be more successful long term in both weight loss and maintenance.
