It's easy to get creative with scrambled eggs. For veggies I like to add chopped peppers, black olives, spinach, and tomato. Sometimes I'll add chopped pieces of ham if I want meat in my scrambled eggs. I also add a little bit of cheese and some hot sauce or salsa.
If I'm making a breakfast sandwich, I like to fry one egg then add a slice of cheese, some turkey bacon, and some hot sauce.
I also found a recipe on Pinterest that I adapt for egg muffins. I tweak the recipe to add whatever veggies or meat I want. You can easily adjust the calories to fit your goals since it's so easy to add or subtract ingredients. The base ingredients are eggs (or egg beaters) and cottage cheese. Check out Pinterest for a bunch of recipes on egg muffins.0 -
For me, hot sauce. I don't think they need anything else.
I have, though, started to enjoy fresh tomatoes on the side instead of a meat. Trying to change my dependance on breakfast meat.1 -
I had spanish omelette today and it was one of the most filling omelettes I have ever eaten. Give it a try if you get a chance.1

Spinach & Feta
Ham, broccoli, cheddar (usually as an omelette)
Sour cream & chives
So much hot sauce
Really any cheese left in my fridge
Black beans & salsa
Cream cheese & leftover shredded chicken breast
Plain scramble + diced avocado

Chunky salsa and black pepper. That way you don't have to chop onions or tomatoes and the seasoning is already in there most of the time1

More eggs, and maybe salsa. Also I add egg whites.0

This was a lazy one. I didn't saute onions like I usually do, I just microwaved cauliflower and pepper to soften and that's all. Eggs have a white "skin" on top of yolks but are soft poached.

I sautee mushrooms, zucchini, tomatoes, spinach and cheese. I eat it with toast, and sometimes on top of a Morningstar Farms Grillers Prime burger for 17 extra grams of protein. Breakfast is my favorite meal! And sometimes my biggest of the day0

spinach, red and/or green pepper, sausage, cheese, mushrooms, taco meat, chorizo, jalapeño, salsa--it just depends. Most frequently (e.g. today) is spinach and sausage with cheese. If I am out and about, I ask for whatever veggies they have but not onion (doesn't agree with me) and heap on some salsa or cholula.0

I'm not a huge fan of eggs but my aunt-in-law makes THE most incredible scrambled eggs. She beats them with a whisk to get more air in them so they end up fluffy. Then she adds sprinkles of salt, pepper, tumeric, and just a little bit of smoked gouda. Since smoked gouda has a stronger flavor, a little goes a long way. Otherwise, on plain scrambled eggs, I like a little bit of salsa verde.2
