    Just finished a homemade pizza- chicken, bacon, mushroom, capsicum, red onion, roast pumpkin, low fat cheese and sugar free BBQ sauce. With a salad.... Yum!

    @jayemes it was good! I think the squash would work well. I was going to use acorn squash but I was at the store anyway, so I went ahead and got the sweet potatoes. :)

    The last time I made quinoa and ground beef stuffed poblano peppers, I made a double batch of the filling and froze it, so I pulled that out to use tonight. I bake the stuffed peppers with a can of fire roasted tomatoes and top with shredded cheese.
