I'm curious how to do the Keto diet. I know it's more fat and less carbs. But what about veggies? Salad, apples?

Figure out how many calories you need to eat to maintain your current body weight, then eat less of them. Do what is comfortable, don't starve yourself. The high-fat foods in keto will help curb appetite which can make it easier to eat less. Macros should be between 5% and 10% carbs (including veggies), 70% to 75% fats, and 20% to 25% protein.

No more apples. The only fruits you should ever eat are the ones most people consider veggies like eggplant, cucumber, tomatoes, avocado, etc. The only exception I can think of to that would be lemons and limes. (At least that is the approach I'm taking with fruits because the sugar in them will blow your carbs out.)

Keep close track of your sodium, potassium and magnesium intake. Drink plenty of water too because you will be losing water weight. I've been doing keto for the last couple months. Before I started keeping track of weight a few days ago, I assumed I had lost between 20 and 30 pounds. Since I start weighing, I noticed I have been losing 0.79 pounds per day over the last four days.

That's not getting crazy with calories or starving myself. If I'm hungry, I eat or drink my keto coffee. I will usually drink over 100oz of water a day too.

The reason I'm dropping so fast right now is that to maintain my weight I would need to consume close to 4,000 calories a day, but I have been very comfortable with close to 1500 each day. Add in a little exercise, and the net calories are even lower.

It's all about the caloric deficit, but don't overdo it. Better to lose weight at a slower pace and have a much better chance of keeping it off than to lose a whole lot fast and then revert back to your old ways because it is unsustainable.
