    Grill or broil the Zucchini for 2 minutes on each side first. If you go on skinnytaste.com it has a wonderful recipe also.

    Thanks for this recipe! I've been looking for ways to "health-up" some italian dishes. Since Fall will be coming shortly, this would be perfect comfort food without all the calorie guilt. Now I have some new uses for all the zucchini I'm growing in my garden!

    Bump for anyone who hasn't seen this recipe yet! I love it! Made it with yellow squash this time and it was just as good as with zucchini! Sauteed mushrooms and onions to add to the sauce, which made it chunkier, so I ended up using a little more sauce than what the recipe called for. Also used fat free ricotta to lighten it up a little more and it was great! Thanks again for the awesome recipe
