I have never heard a name for the egg in toast thing. Egg in a hole or egg in a basket seem to be common names though there are many. http://www.extracrispy.com/food/3738/there-are-at-least-66-different-names-for-egg-in-a-hole
Egg in a hole seems most accurate and the best name to me.
A blanket to me implies that the egg would be wrapped up like pigs in a blanket. Egg in a basket or nest seems more appropiate since the toast is carrying the egg but not covering it.
