CarboHYDRATES = Water weight.
I don't eat a low carb diet, but when i have a particularly higher than usual carby day i know the scale will spike up the next morning. I'm usually back down to normal the next day or two.4 -

I don't know how large a calorie deficit you're on and for how long you've been dieting at this deficit but I can tell you from personal experience that prolonged dieting can mess up your metabolism and literally bring your weight loss to a screeching halt! I lost 50 lbs in 5 months on an extreme calorie deficit and then the weight loss slowed to a crawl to the point where it stopped completely even though I was still in 500 calories/day deficit. My Metabolism compensated for the extended deficit and literally put the brakes on weight loss. Still on my significant calorie deficit, it took me 4 months of zero weight loss and lots of research to realize what had happened and how to reset it. I began eating at maintenance level to even a slight surplus (10%) for about a month. Over that time I boosted my calories/day up by 1000-1500/day and gained only 5 lbs in total over the whole month. My metabolism had reset and when I went back into a moderate (20%) calorie deficit, I began losing weight again at a health and consistent rate.
The moral of this story is that calorie deficit dieting should be short term, intermittent with healthly weight maintenance eating to preserve the function of your metabolism and help you reach your goals faster.

Having read this and a couple other posts of yours OP...I think the problem is that you're getting way too wrapped up in the day to day and the, "I ate this and this happened" thing and then concluding that whatever you're doing isn't working and jumping around all over the place trying this and that rather than trusting the process and being consistent over time.
That's not the way our bodies work. You need to take a giant step back and start being consistent and trust the process and look at general trends over weeks and months, not the day to day.18 -

I've really come to believe that people with this misconception are not going to succeed, as each fluctuation sends them looking for a new diet. And it's incredibly frustrating because many of them say, "I know it's just water weight", but clearly they don't get what that even means or its significance. Think people! It requires 3500 calories *beyond your maintenance calories* (not the calorie allowance MFP gives you to lose weight) to gain a lb of fat!
And incidentally, though this particular fluctuation happened in the wake of a low-carb diet, it can happen on any restricted calorie diet, as any reduction in calories likely means a person has reduced his/her carb intake.7 -

How is it that you understand that the low carb diet results were impacted by water weight when you lost it, but you don't understand that when you ate higher carbs you gained water weight back? Isn't that obvious?
As stated in your other thread, and summarized succinctly by @kimny72 - you've been given great advice in your other thread about the impact that this bouncing around from diet to diet has on your long term weight loss trend. Take some deep breaths and stop looking for quick fixes and direct causative explanations for something that is impacted by countless variables.
Pick a calorie target.
Eat within that calorie target.
Log everything you eat as accurately as possible.
Be patient.
That is all you need to do - seriously. Stop majoring in the minors.15 -

I had a packet pasta of batchelors pasta n sauce made with water only, I’m not saying it’s made me gain ‘fat’ I was just wondering why pasta could make me bloated and gain on scales (again only know what I weighed after because I went to slimming world to get my weekly weigh in done)
Have you considered wheat intollerance as a possibility?
My intolerance transitioned into a full blown allergy and I can't have anything containing wheat now, but several years ago I would look seven months pregnanat after ingesting pasta or bread.
Look into it. I underestimated the symptoms and the damage caused by the particular enzyme I have problems with (it's not gluten) lead to a cow's milk allergy. I can't have dairy now at all. My organism can't process it.
I hope that's not what you are having but better to be on the safe side. You could try elimination. Whole 30 is a good way to start. Good luck!

As mentioned, it's water weight.
Your body can store energy in two ways - glycogen (a type of carbohydrate somewhat functionally akin to plant starch) and fat. It prefers to store carbohydrates as glycogen, because it's more energetically favorable versus synthesizing and later breaking down fat. Your body stores glycogen in muscle and liver.
The thing with glycogen is that it's water soluble, unlike fat, and so as you increase the glycogen content of the liver and muscle, the cells must also take up enough water to balance their osmolarity (the amount of "stuff" dissolved in their fluid compared to the fluid outside the cell). There are other things that have similar effects for the same ultimate reason - for example, exercise-induced muscle repair also draws fluid into muscles, and increased sodium intake will increase your blood volume.
I've easily had 10 lb gains in a single day from going from a glycogen depleted (and somewhat dehydrated) state to a carb loaded state.5 -

Thank you!! Someone who I find isn’t patronising and actually read my post properly!! I have considered this as my sister is also wheat intolerant. When I eat white bread/ pasta based things my stomach literally bloats to make me look as pregnant as I was with my daughter. It also gives me bad stomach pains which I know is wind. Which is why I tried this low carb thing in the 1st place, I’ve had no bloating and no wind for the 13 days that I did it. I just wanted someone with the same experience as me to perhaps give me some ideas which you have. I’m not so thick that I think I’ve 2.5lb of fat in one day, I’m not so thick I don’t understand that if I go on a low carb diet then eat carbs I’m going to gain water of course I know that!! And I also know how to diet/healthy eat but I wanted a bit of advice on what to do because I’m struggling and I’m sorry MFP but some of the responses I’ve had on here have totally put me off using it, at the end of the day it looks like I’m NOT the thick one it’s just that you guys don’t read..... and with some of your messages I’d advise you not to come across so rude because you ‘know it alls’ actually put people off doing it... which is a shame

If carbs were causing people to gain weight without being in a calorie surplus you wouldn't see so many success stories here of people who didn't restrict carbs and lost a lot.
It looks like your problem is not the carbs, or the food, it's the scale. This can be tackled in a couple of ways:
Either step on the scale only once a month, or weigh yourself daily and use a trending app. I like the second choice better because normalizes daily water weigh fluctuations and gives you a trending weight. At the end of the month you can look at your chart and see how silly it is to worry about fluctuations, which naturally happen for several reasons including eating a high carb and/or a high sodium meal.
Two days ago I had a blip up on the scale of 7 pounds after starting a new fitness program. It didn't freak me out because I knew I would just go down naturally later, and it did, today I'm the lightest I've been this week. Freaking out about these blips is like freaking out about an increase on the scale when you step on it wearing a backpack. The backpack didn't make you suddenly fatter, it's just a temporary increase unrelated to the amount of fat you have.
ETA: if certain products are causing you pain, then that's a different issue you need to explore with your doctor.10 -
Maybe this will help. It takes 3500 calories to gain one pound of fat.
So if you crave pasta, but know that eating pasta will make you blow up like a balloon due to glycogen replenishment and the associated water weight, you can safely eat 1000 calories of pasta, or however many you can fit in your calorie budget. Then tell yourself firmly, "Now I will weigh five pounds more, according to the scale, but I know that since I only ate 1000 calories worth of pasta, the weight gain is only temporary because physics is a real thing and you can only gain a third of a pound from that many calories."
Then step off the scale and carry on. Eventually the temporary weight will go, and in the meantime you don't have to worry because you know your intake.
Build treats into your plan so you don't feel deprived and need to binge.
There are a couple of tricks I use to make myself contented with one serving of food instead of wanting to eat more.
One is to limit the amount of time I spend eating. When I'm done, I get up, and I go do something else, which doesn't allow me to eat at the same time. It's difficult to binge on pasta while taking a walk or doing Zumba. My husband is a very slow eater, and I noticed that when we eat together, I would finish and then get bored and hungry while waiting for him to finish, then have seconds to keep him company. As much as I love slow meals with conversation, my sanity required me to tell him that after a reasonable length of time, I'm out. If he wants to take an hour and a half to finish his food, he can finish by himself.
Another trick is to remind myself that I can have more tomorrow. It takes a while to make yourself really believe this, but when you get the hang of it, it really works, because it gives you something to look forward to.0 -

Unless I missed something, or you have more than the 2 threads on the subject that I'm aware of, your OP never mentioned:
carbs cause you pain
there were any issues with carbs beyond your current experience consuming them after keto
you have a family history of wheat intolerance
I'm sure your responses would have been 100% different with this info. What I saw was, "how can I not fall off the wagon?" and "why did I gain weight after eating carbs?", so I thought those were the questions you wanted answered.

Yes and no, yes the fact that I need patience and not to rush but also going to stick with staying off pasta and white bread due to the pains/bloating ect I get but not to a so low carb diet as it just doesn’t suit me0

Read your post properly? You made no mentions of pain, family history of wheat intolerance or any of that...literally, your entire post was focused on the scale and why you gained weight from having a higher carb day...5 -

Low carb doesn't have to be keto or Atkins. Low carb is anything under 150g a day.1 -

I had a packet pasta of batchelors pasta n sauce made with water only, I’m not saying it’s made me gain ‘fat’ I was just wondering why pasta could make me bloated and gain on scales (again only know what I weighed after because I went to slimming world to get my weekly weigh in done)
Have you considered wheat intollerance as a possibility?
My intolerance transitioned into a full blown allergy and I can't have anything containing wheat now, but several years ago I would look seven months pregnanat after ingesting pasta or bread.
Look into it. I underestimated the symptoms and the damage caused by the particular enzyme I have problems with (it's not gluten) lead to a cow's milk allergy. I can't have dairy now at all. My organism can't process it.
I hope that's not what you are having but better to be on the safe side. You could try elimination. Whole 30 is a good way to start. Good luck!

This response you're so happy with literally has nothing to do with your OP. Nothing at all. As such, it all but shows that that poster did not read your post properly. Everyone pointing out that reintroducing carbs (along with eating more food than apparently usual) made you retain water are the ones that clearly read your OP properly.
