    Boil or steam a cauliflower, then run it through a food processor or a ricer.
    Cover the bottom of a glass pan
    Cover that with chili
    Cover that with chicken (cook beforehand in a pan)
    Bake at 350 for 20 minutes
    Take out, cover with cheese
    Bake for another 5-7 minutes or until cheese is all melty.

    This one does not say to cook in oven but you probably could - it is very easy and vrey tasty

    I am a bit of a laughing cow addict lately, so I put it in everything. Something simple: Grill or bake a chicken breast, seasoned to your liking, spread laughing cow cheese and salsa on top. Yummy with steamed broccoli!
    I also got creative the other night and came up with this and it was sooo good.

    4 Boneless Skinless Chicken breasts (Around 700g for my stats)
    6 Laughing Cow Light Cheese Wedges
    Broccoli florets (About 90g)
    Red bell pepper (About 1/2 cup)
    3 medium white mushrooms

    Chop up the veggies into small little bits. Mix all together with laughing cow.
    Meanwhile, pound the chicken breasts until thin. Divide veggies mixture evenly among the breasts, rolling and pinning with toothpicks. I baked at 375 for 45 minutes, then at 450 for 5 minutes to brown it.
    Makes 4 servings, and each serving was 171 calories, 3 carbs and 3 grams of fat. I just boiled some potatoes and microwave "steamed" some carrots. Was really good!

    i recently tried lemon pepper chicken..

    wash your chicken really good. sprinkle on some lemon pepper seasoning (found in spices isle at grocery store) and pop in the oven covered and bake for 45 min to 1 hour.

    Fake Chicken "Parm"

    I don't have exact measurments for this:
    2 boneless/skinless chicken breasts
    1-2 sticks string cheese (depending on how big the breasts are)
    some thawed spinach
    low fat shredded mozzerella cheese
    1/2 Jar your favorite spaghetti sauce

    Wrap spinach around the string cheese
    Cut into the chicken breasts, stick the string cheese in the middle (1/2 of one for small breast, whole one for larger)
    Place in a sprayed 8x8 pan
    Top with sauce
    Cover with cheese
    Bake at 375 for about 25-30 minutes or until juices run clear.

    I have one...but it's not for the oven, but the crock pot. Takes 5 minutes to prep and set it and forget it!


    Ingredients:

    Chicken Breasts - how many ever you want
    Jar of your favorite salsa (I experiment with different flavors)
    Jasmine Rice

    Put chicken breasts in crock pot...dump jar of salsa over. Cook in crock pot 4-6 hours on high or 6-8 hours on low.

    At meal time, prepare Jasmine rice as directed on package. Serve chicken over rice.

    This is awesome as leftovers as well. My family loves this dish...and I love that it literally takes me less than 5 minutes to prep.

    This is really good but my hubby doesn't like rice, so I serve over some kind of low cal pasta.
