How many vegetables do you eat regularly?

Can't stand raw veggies, steamed is not bad though, and honestly food brands are doing some pretty creative things to veggies these days. Broccoli cheddar Tots, mashed cauliflower, zucchini fries... I love those new twists on traditionally carb heavy, low-nutrition food. And it usually means I can eat a LOT more than the food item they're duping and still stay under my goal.0

I’m WFPB - so pretty much only eat fruits and vegetables, plus beans, nuts and seeds.0

Just a small detour from the thread and a tiny note. These foods are nice to have for their calories, but potatoes aren't at all low nutrition. If you feel like having the real thing, not the imitation, and you have the calories, potatoes are an amazing starchy vegetable. Nutritious, and in my case, delicious and highly satiating. There is nothing wrong with making a lower calorie choice, but people need to stop looking down on potatoes.11 -

Maybe I was projecting my subconscious potato stigma from years of fad diets... my bad I'm learning to love them again and seriously enjoy a hot baked potato when I have one (sour cream and chives on top, of course).3 -
Not nearly as much as I should. I eat about 3 servings a day. My goal is 5 servings a day. I love veggies, so thats not the issue. I just tend to want to spend my calories on fruit instead. 50 of broccoli or 50 calories of berries....fruit always wins.1

It really varies for me, but I do eat a few servings of veggies each day.
VERY common (not daily, but more than weekly):
zucchini
cooked spinach
onions & scallions
bell pepper
carrots
broccoli
cabbage
lettuce & mixed greens
Weekly or so:
tomatoes
potatoes/sweet potatoes
celery
cauliflower
asparagus
green beans
raw spinach
Once in a while:
corn
peas
kale
bamboo shoots
daikon/radishes
eggplant
collard greens
okra
artichokes
I have never even tried turnips and my husband is the main cook and hates Brussels sprouts so I haven't had those in many years.
As for fruit, I eat apples, berries, pears, bananas, pineapple & avocado very regularly.
Oranges, plums, grapes & honeydew or watermelon occasionally/in season.2 -
I end up having 5-7 servings of fruit and veggies a day.
1 serving of fruit for breakfast
1 serving of veggies in my scrambled eggs for breakfast
large salad with various veggies for lunch (2 servings)
1 piece of fruit mid afternoon (usually apple)
1-2 servings of veggies for dinner

I eat a variety of veggies or salads (some times both) with lunch and dinner, and I also do a lot of soups with different kind of vegetables (I like to pure the soups). I also eat some kind of fruit everyday, and very often 3 times a day, and 5 oz of low sodium V8.
I log everything in my diary for the daily calories, carbs, protein, and fiber but I don't count them to find out how many servings per day I eat. I am sure that some days I eat more than 3 or 5 servings and some days less than that. No worries.

Try roasting your vegies....including things like broccoli and Cauliflower, Brussel sprouts, cabbage wedges etc. So good, the roasting adds delicious flavour. I just put some salt, pepper and spices on them - you could use a little oil if you want2 -

I'm 62. Over the course of my lifetime, science has "discovered" quite a number of essential micronutrients. Those are now included in multivitamins. They were in evolution-tested foods all along.
I strongly doubt that science has reached the limit of discovery, so I personally prefer foods to supplements. Your mileage may reasonably vary.8 -
I eat as much as possible! I love veggies and fruits and feel great when I incorporate a lot of them1

I eat at least 10 serves of vegetable a day and have two serves of fruit on top of this. My salads are huge.2

I have at least 2-3 servings worth of veggies with dinner and usually 1-2 with lunch but not always.
Asparagus and brocollini are two I’ve been enjoying with dinner lately. Also baby spinach is great in salads and more nutrient dense than plain lettuce. I also do a lot of sales with cabbage and other veggies which I love0 -
I try for 2-3 fruits every day and 4-6 servings of veggies. I am a household of one, so I usually eat the same veggies for a week at a time and then change it up the next time I go grocery shopping. This week I'm building my meals around broccoli, carrots, bags of frozen stir fry vegetables, bell peppers, onions, and tomato sauces and salsa. And pinto beans, if we're counting those as vegetables.
Next week I'll be eating spinach, cabbage, broccoli, tomato sauces, split peas, celery, tomatoes, and sweet potatoes.1 -
I have whatever berries are in season with my oatmeal in the morning and a huge salad at lunch and sometimes salad for dinner too. Arugula is my favorite salad green; I'll eat it plain, right out of the bag.
I love vegetables generally, though. I spent about a year and a half as a vegetarian and even though I ultimately went back to eating meat, my time as a vegetarian made me a better cook because I had to find new things to eat and I had to learn how to cook them. If you want to get better at cooking vegetables and/or making meatless meals, two cookbooks I recommend are Vegetarian Cooking for Everyone by Deborah Madison (in its second edition now, I think) and Plenty by Yotam Ottolenghi.2 -
I eat 2-3 servings a day. Ideally I would like to do more, but I think fiber can be tricky for my digestive system so that's one reason why I'm not eating more. Also, I try to mainly stick with ones that are considered more tame on the digestive system, including spinach, green beans, lettuce, carrots, and sweet potatoes. I eat only small amounts of broccoli and cauliflower.1

I can't tell you off the top of my head how many servings of vegetables I get but I do know vegetables play a HUGE role in my diet. I eat a lot of grilled chicken and am always grilling vegetables alongside it, usually a medley.
They've really been a game changer for me. I've found that by eating lots of vegetables, I'm able to eat more and more without the calorie count rising sharply.0 -
About 5-6 veggie portions and 2 fruit portions a day for me0
