scrambled tofu (high protein && vegan))

Hi I just wanted to share my scrambled tofu recipe. I'm a vegan and have just upped my protein intake - which I found extremely difficult at first. BUT here is a high protein, low calorie breakfast / brunch. Serves 2 people;
- 350g silken, firm tofu
- 2 tsp turmeric
- 0.5 tsp garam masala
- crushed or fresh chilli (to taste)
- salt and pepper (to taste)
- 20g raw cashews
- 2 cups spinach
- 2 slices high protein toast
In a frying pan, heat a little oil ((whichever you want I use coconut)). Crumble the tofu into the pan and add the turmeric, garam masala, chilli and salt and pepper. Cook for 5 minutes then add the cashews and spinach. Continue to cook until the spinach is wilted - whilst this is happening, pop down your toast.
Once the spinach is wilted and your toast is done - SERVE (( i add more pepper and some ketchup))
