It's your choice, but I think it would be a better use of your time to figure out how to log accurately. You can reduce to 800 calories now, but what are you going to do next time you get stuck? Right now you're just guessing. It's easier to make adjustments when you know what you're actually eating.

Lessening the calories you log will not change much if you are not logging ACCURATELY. If there are foods you eat regularly, add those to the database. It will take more time up front but will save you more time in the long run. And again, make sure you are using a food scale. Guessing at portions will not be accurate. Quick adding things will not be accurate. If you really want to lose the weight, it is important to be as accurate as possible with your logging.16 -
Do not eat less than 1500 calories a day (for more than a day or so here and there if you are not feeling well). That is the minimum required for an adult male. less is NOT better. you can get into serious health issues.
staying static for 3 weeks is not terribly unusual.
What is more likely is you are actually currently eating MORE than what you think you are. This means there are gaps in your logging. This happens to almost all of us, many months in and I STILL find errors in my logging.
Get a food scale, weight EVERYTHING. ensure to select an appropriate entry to log your food. Weight liquids other than water as well.

The problem is, if you keep guessing and changing a calorie goal you aren't really eating anyway, it's all just a guess and you aren't learning anything. It's just going to make it twice as hard when you hit another stall.
A couple of weeks of logging accurately and consistently, choosing correct items in the database (or creating those entries) using a food scale and logging everything will give you some concrete data to work with and make troubleshooting much easier.
I tend to eat the same things every week as well. But depending on how hungry I am, how much of a rush I'm in, and what my mood are can all affect how I see a portion size. So I think I'm eating the same amount every time, but I'm not. And when you get in the habit of casually entering quick add entries, it's really easy to casually not enter a little snack here or a drink there and be missing lots of calories.

I eat a lot of peanut powder (re-hydrated). For several years I would measure it by the tablespoon, packing in as much as possible and not caring if it was slightly rounded on the top. Well, I finally started to weigh it and realized I was eating almost twice as much as I thought. I always knew that I was probably not accurate with it but never thought I was that far off. I guess my id didn't want to know the true "cost".

The EXACT same thing happened to me a while back. This suggestion may seem weird but it worked for me. The problem is that your body is used to the caloric intake and exercise you’re doing right now. Stop restricting your diet for a while and workout only enough to keep your stamina. Do this for two weeks and then get back at it again.
I lost 10 kgs and was absolutely stuck with my weight refusing to budge despite working out like crazy and eating super clean. I got really frustrated and stopped going to the gym( bad idea as I lost all my stamina) and ate whatever I wanted. When I got back on track after 3-4 weeks, the weight started falling again!16 -

SAME HERE with the powdered pb. I was eating 2x as much and I eat 2-4 servings some days so that really added up1 -
Its been 3 or 4 weeks since you had a loss, sounds like you are eating more than you think - tighten your logging/ weigh your food. If you were truly eating 1000-1200 calories you would be losing.2

OP I noticed your profile says you have been a member since August of 2018 yet you say you have been tracking calories since April. How were you tracking your food before MFP? I am going with the majority and saying you are eating more thank you think you are. Tighten up your logging and get a food scale and use it everyday for all solid foods and measuring cups for all liquids.2
