Greek salad for lunch 330 calories - roasted chicken, olives, artichoke, onion, mushroom, and feta with homemade vinaigrette.

Don't have a name, but it's Ground Turkey, Riced Cauliflower, and 3 Peppers & Onions Blend with Mrs. Dash, Turmeric, and Pepper.

My favorite meal lately has been this vegetarian burrito bowl made with tofu, black beans, brown rice, avocado, and homemade pico de gallo

Bagna Cauda is a great way to eat lots of veg. It’s dipping sauce of butter, olive oil, garlic and anchovies kept warm in a chaffing dish or fondue pan for raw veg. We had it as a starter but you can turn it into a full meal by dipping bread and scrambling eggs is the last of the sauce. The Italian peasant was a culinary genius.
