Mmmmm... crawfish. Thanks for the heads up. I absolutely love them... wish I still lived in Louisiana though. We have them here but they are half the size and twice the cost. The trend is also towards a "fusion" style where they are smothered in a spicy oil/butter. The calories count for that has to be astronomical. I miss the tried and true southern "boil" and spices.0 -
No doubt....Louisiana style is the best!!2

Ugh. They do that with crab here and it kills me. Who wants to splash sauce all over the place when trying to crack your crab? The seasoning is supposed to go in the boil!1 -

Marylander here (home of blue crabs) we don't boil.. we steam them.. seasoning springler on top of crabs then steamed.. pick the meat.. Rob it on the seasoning on the steamed crab..
Crawdads.. love them also.. LA style boil of course.. 😎

If someone would crack them for me so I couldn't see their beady eyes...stringy legs and hair like antennaes.....I would be less grossed out2

If it didn't look up at me I would feel better.1

Not a crawfish to be found in NJ. Never had one.0

The fact that this doesn't exist in PA makes me SO dang jealous. It is hard to even find crawdads in market without driving 45 minutes.1

Yes, you're missing out Aly....they are delicious!! I'm sure there are some great things in PA that we southerners don't have access to, but it would be real difficult to give up "mud bugs"!

I have to wait until summer to get my crawdad fix out here. Fresh crawdads are just not available in Wyo. unless the "Louisiana crawfish" truck comes by. Then they are priced out the wazoo, and are basically sold out anyways as soon as they arrive. PIA. But we can catch our own as soon as it's warm enough..
Now I want a boil. We have a few every year out at the lake with my dad. Crawfish (if we caught any), shrimp, sometimes crab. All that with sausage, potatos, corn, plenty of butter and a cold beer (wine cooler for me, lol). MMMM.....
This needs a visual...

They call them "yabbies" in Australia to even further confuse everybody.1

Ditto here in MN. Currently under a good foot of snow and thick ice that’s not going anywhere anytime soon.
Got a craving now 😉2 -
Crayfish in the UK where, like lobster, they are a very expensive delicacy......I wish I could afford them but have to make do with prawns, crab [love it] mussels and scallops........trouble with crustaceans is that as well as being full of protein they're full of cholesterol. I love them though.....very jealous not to be in Louisiana for the crawfish season.0

Crawfish is the ONLY good thing about Louisiana.1

Could go for a pretty bayou drive right now for some Cajun food. 👍🏻 waving from the northeast!
@njitaliana

We call them mudbugs too! 😝 I'm in TX, close to Cajun Country, & we like to do boils w/ mudbugs, shrimp, smoked sausage, red potatoes and corn on the cob. It can get spicy!0 -

Hmmmm... I dunno about that... There's also Mardi Gras, excellent music, tons of vibrant culture, people you just met who will invite you over to have supper wit dey mom and dem, and arguably the best food and drinks on the planet.
I moved away a few years ago, but I'm still fiercely proud to be a Cajun.5 -

We have lots of crawfish in the streams here in the high mountain deserts of Arizona so going hiking & bagging some is a great calorie burning activity & then you're rewarded by getting to grill them back at camp.1

The only crayfish I can find here are pre cooked frozen. I want to try but how do I get any flavour into that meat without overcooking it? Anyone use the pre cooked / boiled frozen kind? Such as these...
Yes- I have a family recipe for crawfish stew that is to die for, but unless you're familiar with making a dark roux you will likely need someone to physically show you how before you make it. (Or watch a good video!)0 -
Your best bet would be to add them at the very end of your boil. Just long enough to warm them up. Unfortunatly, you can't get much of the boil seasonings into the meat itself. But it will still compliment the other ingredients nicely. I would make your boil with shrimp, and add these in at the end as a little "extra" to the meal. If these are the already peeled kind, those are best to add into a stew such as gumbo, IMO. Then, the meat won't really absorb flavor so much as compliment the dish as a whole. The only crayfish I can find here are pre cooked frozen.
