i'm not eating enough??

i started meal prepping, so throughout my day i eat fruits for breakfast, my first meal which is broccoli white rice and grilled chicken, and then once more again for dinner, but apparently that's not enough calories for one day

It's impossible to say with this little information. Can you give us a little more to work with? Stats (age, height, weight, activity level) and how many calories your meal plan comes out to would be a good start.8

How many calories does it say you are eating? My guess is if you are asking this question, the answer is probably yes. It depends on portion sizes, but that doesn't sound like a whole lot of food. Could easily be less than 1000 calories, which would definitely be too low2

Some people mistakenly think they need to eat a very specific way in order to lose weight. Not surprising the big winner is chicken and broccoli. There is a mindset that if you enjoy your food you are doing something wrong.
You only need to be in a calorie deficit to lose weight. As @quiksylver296 suggests ice cream is still on the menu if you can make it fit in your daily/weekly calories. I eat everything I ate before I started losing weight I just eat some of it in moderation and some of it requires a little planning ahead like banking calories.9 -

How long can you sustain such a limited diet? For me, I wouldn't last a week eating the same food over and over again. I've tried and it just doesn't work. Eating a varied diet that fills you and satisfies your taste buds works a lot better over the long haul. And losing weight really is a question of looking at the long haul. You can lose weight on very low calories, but most people won't keep it off.3

By the way, keep eating chicken and broccoli and you will soon start to get gassy AF from the broccoli. Been there, done that, now can't even look at broccoli anymore without my belly blowing up like i'm 5 months pregnant.
Variety of foods is necessary for health. There are a tonne of green veggies out there, don't rely just on the broccoli.
Add some healthy fats to your diet too. Things start to fall apart when you don't have enough fat.
Chicken and broccoli is not the magic weight loss diet. It's the old-skool uneducated bodybuilder who hasn't kept up with the times diet.5 -

You should not assume that. Some people are perfectly happy eating the same food every single day for extended periods of time. I am not one of them but they exist. A few of them have posted here.
I think it is a bad idea to get most of your nutrition from very limited sources. It is one of the reasons I don't recommend replacement shakes like slimfast. I believe variety is important so I always make it a priority in my weekly planning.
