    1 cup of marketside romaine salad. Then I add 1 tbsp buttermilk ranch salad dressing along with 4 to 6 oz of meat, normally leftovers from the night before. Typically grilled chicken, pork tenderloin, even turkey burger meat.

    This may also not be what you were thinking of, but it's one of my fave's lately:

    APPLE SALAD
    1 Crisp Apple
    2 Tablespoon Raw Walnuts - chopped
    1/2 cup Grapes (halved)
    1-1/2 Stalks Celery
    2 Tablespoons Reduced Fat Mayonnaise
    1 Tablespoon Fresh Lemon Juice
    Salt and Pepper to taste
    Wisk together the mayonnaise and lemon juice, and salt & pepper, until combined.
    Cut celery and apple into small squares. Toss all ingredients with dressing and serve 1 of 2 waysL in 1 large leaf of lettuce so you can wrap it and eat it, or with 0.5-1 cups shredded lettuce.
    Makes 3 decent servings, each at approximately 120 calories
    So refreshing! ;)

    Baby arugula
    1/4 cup candied walnuts (trader joe's)
    either 1 heirloom tomato chopped (when in season)
    OR 1 peach sliced (again if in season)
    an ounce of semi hard goat cheese (such as midnight moon) thinly sliced

    All tossed with Champagne Pear Vignaigrette (also Trader Joe's) and seasoned with kosher salt and fresh ground pepper.

    Sometimes I add in roasted beets instead of the peach/tomato and if I have leftover roasted chicken breast I throw some of that in there as well. Lol.

    Love arugula.

    Cucumber, tomato, red onion, feta cheese, celery every diced with a drizzle of greek dressing. I am not a fan of greens anymore. I fell like I a eating leaves. Oh wait I am. I've eaten too much in my life I go for other vegies mixed together.

    My two favourites (I don't actually measure everything, just to give an idea of the portion size):

    2-3 cups mixed greens
    10 cherry tomatoes, halved
    1 cup chopped cucumber
    1/2 cup chopped red pepper
    2 cups sliced mushrooms
    1 cup sliced onions
    1 potato, halved and sliced 1/4 inch thick
    3-4 ounce salmon fillet, skin on
    Salt and pepper
    Olive oil
    Dressing of choice (I like Kraft Fig and Balsamic)

    Place the salmon fillet and potato slices on a parchment lined baking sheet. Drizzle potatoes lightly with olive oil. Season fish and potatoes with salt and pepper. Bake at 425 degrees until cooked. Turn potatoes halfway through.

    Lightly saute mushrooms and onions in a frying pan with a tiny bit of oil. Saute until nice and brown.

    Put greens, tomatoes, cucumbers, and red peppers in a bowl. Add mushroom and onion mixture over top. Add potatoes. Remove salmon from skin in large chunks and add. Dress and eat.

    2-3 cups mixed greens or spinach
    10 cherry tomatoes, halved
    1 cup diced cucumber
    1/2 cup diced red peppers
    1 plum, cut into thin wedges
    2 eggs, medium to hard boiled
    Dressing of choice

    Combine and eat. Delish.

    I like this thread. I'm going to steal some of these ideas.

    Lately I've been using:
    1 cup Baby spinach
    1/2 Cucumber
    5 Cherry tomato halved
    1/2 cup Alfalfa sprouts
    1/8 cup Sunflower seeds
    1/2 Avocado

    Dressing: 1 tbsp olive oil, 1 tbsp lemon juice, 1 tbsp Bragg's liquid aminos.

    And for dinner I'll throw some grilled chicken into it. Yum. Love salad! :-)

    Romaine
    Cucumber

    Green Pepper
    Vidalia Onion
    Olives
    Black Beans
    Sunflower Seeds
    Grilled Chicken Breast
    Cubed Cabot 75% Reduced Fat Cheese
    Maple Grove Farm Fat Free Caesar dressing (2 tbsp. 10 cal)

    All of these look so good!

    A favorite of mine:

    sliced granny smith apples
    chopped romaine (coarse)
    craisins
    feta cheese

    dressing: (serving size for 1)
    2 tbsp dijon mustard
    1/2 tbsp olive oil
    3 tsp honey (warm up the bottle in a saucepan first so it whisks well, not too hot!)

    drizzle the dressing over the freshly combined salad and toss. YUM!
