Chickpea Veggie Bowl

I’m new so I hope this posts to the thread for food pics...show me yours.

I recently decided to go Vegan. Here’s the recipe as well. Enjoy!

Dinner: Chickpea veggie bowl 🍲
💥💥💥💥💥
Ingredients:
1 can drained rinsed chickpeas (save the liquid for aquafaba stuff)

2 pinches Of shredded carrots
1 Red onion sliced
1/2 green squash
1/4 can of corn
1/2 yellow pepper
1/4 orange pepper
Sautéed in oil with salt, pepper, onion & garlic powder
💥💥💥💥💥 Might I suggest a side of baked sweet potato wedges and your favorite dipping sauce.

    That looks so good! I’m going to make this... did you eat it as is or over rice? I’ve started following Dr. Fuhrman Eat To Live. If I make this without the oil it’s a huge win! Thank you!

    @DHarney63 I ate it as is. You definitely can do it with a little water at a time in the pan as opposed to oil.

    Both those points - ‘pinch of carrots’ and the calorie count which is by my rough reckoning made up of at least three-quarters by oil, are exactly what I thought when looking at this! Far, far too greasy to eat, for me personally!
