Rice, potatoes, sweet potatoes, lentils and other dried beans.
I like rice noodles, but they only work well in asian noodle dishes in my opinion. Google dishes like laksa, pho, bun cha, char guay teow, pad thai for some typical asian rice noodle dishes. However, as a celiac you will have to use gluten free soy. Some of the SE Asian dishes such as pad thai and bun cha will use fish sauce instead of soy, which is gluten free.0 -
Which gluten free breads, pastas, etc have you tried? Just curious.
Zoodles, spaghetti squash, shirataki noodles, spiralized sweet potato, lentil pasta.

truRoots ancient grain pasta is one of the best-tasting GF pastas I've tried, but in all cases I find they're better mixed in a sauce or as part of a one-pot meal than "naked". Plain GF pasta is not a pleasant thing, IMO! (GF spaghetti is just slimy and revolting, from the brands I've tried.)
GF bread is another matter, and the only half-decent one I've tried is the Western Family brand from Save-On-Foods. I find that GF breads are just not worth the expense.
Fortunately, a lot of foods are naturally gluten free. And there are a ton of websites out there these days that cater to the celiac or any others who want to avoid gluten. (I have an issue specifically with wheat rather than gluten, but since GF recipes are also wheat-free they're helpful to me!)

If you like to bake (or to eat baked goods! ), that's a whole different animal. Baking is a science, not an art like cooking, and you need (in most cases) a blend of flours with certain properties to get a good result. This site has some good info, but in general don't expect your GF baked goods to be much like their gluten-laden counterparts. That doesn't mean they can't be delicious in their own way, but a GF brownie is not going to be the same as a regular one!

Check out paleo recipes. They tend to be tasty AND gluten free.
I like shredded cabbage as a rice/spaghetti substitute. You can use cabbage leaves as a wrap too!
Mexican dishes with gluten free corn tortillas. You could make enchiladas, tamales, in addition to tacos, fajitas.
Or just a protein, salad, and side veggie!
Lots of great quinoa, bulgar, black bean salads out there!1 -
While I am not gluten free, I most of what I cook doesn't involve gluten or if it does it's a side sort of thing (bread). That is to say, I would just look for general recipes and see whether or not they have gluten laden things and if those things are easily subbed out or just taken out all together. Note that I used to be really reactive to gluten and got really used to having to avoid it (lest I want "fun" gastro intestinal issues), so I'm not just saying this with the assumption that it's super easy or not a big deal, especially if it's new for you.

The last recipe is the only one that definitively has gluten in it (the bulgar), however the bulgur could easily be left out and you could serve it with or without rice as a substitute. I keep being tempted to say, "generally X type of cuisine doesn't have gluten in it" but that's honestly a long list of Xs.0 -

Anyone know some simple meals that doesn’t contain gluten or gluten alternatives? I absolutely hate gf bread and pastas, so I’m trying to just avoid them all together but I have celiacs. Any ideas that aren’t gross?
I'm not Gluten free but recently discovered 3 Bakers Bread and Rolls. OMG, so good. The bread smells and tastes like stuffing.0 -

I don't eat gluten. Lunch is usually a big salad. Here are some dinners I've had recently:
Salmon with brown rice and snow peas
Flat iron steak with roasted squash and brown basmati rice
Thai yellow curry with shrimp
Apple tamari glazed pork with with broccoli, bok choy and sauteed cabbage
Asian white fish with red curry quinoa and mixed vegetables
Roast chicken with sweet potato wedges and mixed green salad
Salmon with a citrus glaze, parsnip puree and spinach
Roast turkey with a maple/mustard sauce, sundried tomato cauliflower rice and asparagus
Roast turkey with garlic mashed potatoes and green beens
Salmon, orange quinoa and lemon spinach
Lime chicken with rosemary roasted vegetables
Lamb sirloin with tzatziki sauce, asparagus and mashed yams
Spring pea risotto

I really like Banza chickpea pasta - high protein and fiber. I'll bake a large pasta dish with it and eat leftovers, super easy. Other good dishes for this are shepherd's pie (can do with lentils or Beyond Meat crumbles in vegetarian - both GF). Chia pudding for breakfast is good, as is My New Roots Life Changing Bread (google for recipe). Grilled meat/fish and veg also are quick if you don't want to cook in batches. I also keep bags of frozen shrimp - quick defrost is all you need for stir fry, tacos, or just shrimp cocktail.
When all else fails, popcorn and wine make a delectable easy dinner.1 -

Grilled shrimp and chicken bowls with black beans, vegetables, salsa and avocado
Grilled salmon, beet and avocado salad with citrus dressing
Grilled filet mignon with blue cheese sauce, squash casserole (GF breadcrumbs) and corn on the cobb
Slow cooker pork BBQ, coleslaw, sauteed greens and yellow squash muffins made with GF flour blend
White bean caprese salad with basil chicken sausage (AmyLou brand)
Risotto with shrimp and green peas
Bobby Flay's grilled Greek Chicken (this recipe is amazing: https://www.foodnetwork.com/recipes/bobby-flay/butterflied-chicken-greek-style-recipe-1941166) We make this often in the summer.
