    Cold tapas/mezzes. Spanish tortilla, greek salad, marinated Portuguese carrots, a few slices of serrano ham, a little bit of mojama drizzled with olive oil and sprinkled with toasted almond.

    Snack of pina colada sorbet with a coconut macaroon. Sorbet was made with tinned unsweetened pineapple with a few tablespoons of Splenda, macaroons were made with half the sugar replaced with Spelnda. The sorbet freezes more solid when you replace sugar with an artificial sweetener, so needed to be loosened by running it through the food processor after freezing.

    These? Salt, pepper, garlic and marjoram. Casings are always from pork.

    Awesome, thanks. I might do something similar but subbing in thyme and maybe rosemary (both are growing very abundantly in my garden). I also need to try out lamb casings. I don't eat pork anymore (or rather, I try very hard to avoid it and am typically successful) and I'm up to the challenge of fragile lamb casings....and now I know what I'm doing with my afternoon (assuming the store closest to me has lamb casings)

    One of my very favourite dinners at this time of year. Figs, soft goats cheese, thyme and a drizzle of honey and black pepper. Served on a herby salad bed with lots of red onion. ❤️
