A few days late but Christmas dinner the other day

We are still suffering from post Xmas kitchen fatigue. Pulled out a portion of cassoulet from the freezer to have with green salad that contained some halved grapes.

Easy dinner and faux cheat meal: pan fried mahi and curried turnip fries. I dredge the fish in egg whites and a seasoned 1:1 mix of semolina and all purpose flour to maximize crunch.

NYE Dinner, a reflection on balance: sous vide steak and lemon citrus quinoa timballo; orange glazed scallop, roasted red pepper and avocado round, and arepa, goat cheese, and caramelized red onion stack.

Pomelo salad, Singaporean chicken curry, rice.

Tonight is roasted chicken (I will have a breast, Boyfriend will have a breast, and Girlfriend will have a leg) with cranberry-cornbread dressing, steamed green beans, and hot rolls with butter. Surprisingly, it works out with my macros, as long as I am sparing with the butter. More to the point, it's satisfying and tastes good and leaves me replete, so I don't want to eat any more.2

A grain bowl? (or something). I wanted roasted vegetables thus I roasted some brussels sprouts and a delicata squash. While they were roasting I melted some ghee and simmered it with 3 tbsp of maple syrup then added chili flakes and a tbsp of coconut vinegar and simmered it for another minute. I ate it with fonyo because I decided that maybe I should have a bit more food.
Very tasty, very last minute.5 -
