Today's breakfast: oatmeal (2/3 cup, uncooked) with a baked 'n spiced apple. I mixed in oat milk (1/2 cup) and lactose-free Greek yogurt (1/2 cup) then it was all topped with chopped walnuts (1 tbsp) and a sprinkling of brown sugar (01/2 tsp).
It's a lot of oatmeal once cooked so I get to nibble on this all day 😋2 -

Frothed some milk with tiny bit of instant cheesecake pudding, then added coffee. Starbucks got nothing on me.3 -
Several things come to mind..
When I was up in Detroit, it was the hummus from the middle eastern restaurants, and also the Botanas (basically loaded nachos) at one of the restaurants from Mexicantown.
Back here at home, its the saag paneer with cumin rice I've been making most weeks. I eat it nearly every afternoon for lunch.1 -
