Unseasonal beef estouffade and mash with a side of green salad with ranch. We had a freezer crisis yesterday probably due to the heat wave. The alarm went off that the freezer had reached a dangerously high temperature. I rescued a kilo of raw salmon by cooking it mi cuit with the sous vide wand and then re-freezing what we didn't eat last night. I rescued a kilo of beef shin by making estouffade aux olives with the sous vide. The freezer is full of that stuff too.

Trying to clear out the freezer of any raw meat that might have partially defrosted on Wednesday when the freezer alarm went off that the temperature was dangerously high. Chicken thighs and oven chips were air fried. Sauteed frozen peas a little tomato salad. The dutch have their fries with mayo, but the hubby didn't object to a mixture of yoghurt and wasabi mayo.

Hot weather breakfast of peach and banana sorbet and strawberries. Blitz together a tin of fruit in light syrup with a ripe banana and freeze. Mash every hour with a fork while freezing if you are not using an ice cream churner.

Almost Paleo pancake
2 eggs
1 banana
1 tablespoon of self rising flour
Topped with a sliced fresh peach, low fat plain Greek yogurt and a drizzle of buckwheat honey

Still trying to finish the raw meat that might have partially thawed on Wednesday when the freezer alarm went off. We still need to deal with a couple of raw steaks in the freezer but other than that all the meat that was in the freezer has been cooked sous vide and refrozen or eaten. Tonight we had the duck legs roasted in the air fryer with hasselback new potatoes and roast asparagus with red wine sauce.

With the hot weather I have been experimenting with experimenting with quick tinned fruit sorbets. This one was a large 850 g tin of mango in syrup and two and a half banans blitzed together with a juice of a lime and frozen. Topped with some fresh pineapple and strawberries.

This is the recipe I based it on - I subbed black eyed beans for half the chickpeas. Also added a yellow pepper and used Skyr with a a tbsp of coconut milk powder mixed in to replace the coconut milk to reduce the calories. Also skipped the oil by sautéing the onion in a splash of the vegetable stock. It’s a good base recipe, spice wise to tweak to your own tastes!

Hubby cooked tonight. Dutch boerenkool stampot (=mash with kale) and chicken sausage with a little cherry tomato and mustard.

Soya Mince Spaghetti Bolognese with salad. Huge plate of food for around 450 cals. I’m happy! 😊

Meant to eat at the new Japanese Udon place in the neighbourhood but they closed early. Went to the dependable Szechuan place instead. Order also included a single serving of steamed rice not pictured.

Spinach Crepes filled with Leek, Mushroom, Tomato, Red Pepper with Shakshouka style spices. It didn’t look quite as lurid in real life as it does in that photo! 😂

Tried to go to the new Japanese Udon place that opened nearby again but this time there was a queue so we went to the cheap Vietnamese local instead.
