Dinner for a friend at our place. Linguine aglio olio to start. Greek themed mixed grill as main. Kid goat rack, wings and baby corn roasted in the air fryer, greek salad, grilled courgettes, some microwaved poppadom's for dipping into tzaziki. Made with food gifts (tzaziki spice mix, kalamata olives, barrel aged feta) a friend brought back from vacation in Corfu. Panna cotta for dessert with a choice of strawberries (including the portion for the 2 year old) or caramel/espresso sauce.

Not sure what to call this 😂. It’s Runner Beans, sliced olives, Italian tomato sauce and crumbled low fat feta. 🤷♀️ Whatever it is, it was good!

Cantonese char siu pork cooked in the sous vide and finished with a blow torch. A selection of mostly Korean veggie sides. Courgette, carrot and wakame namuls. Pickled watermelon rind. Thai seafood dipping sauce.

Air fried chicken legs, mashed potatoes and tomato/mozzarella salad. I don't think it's worth the time to air fry chicken. It took about 25 minutes and while it was crispier than what I get with oven baked I don't eat the skin so it's adds no value. Also when I do the shake & bake method in the oven the spice flavors permeate the meat but that doesn't happen in the air fryer. It was still a useful experiment.

Hubby didn't feel well so dinner was light and odd. Salad with blue cheese and candied nuts. Panna cotta with fruit.

Dinner looked elaborate but was actually about 15 minutes of actual work in the evening because a lot of stuff was pulled out of the freezer. Took out some batch cooked beef rendang from the freezer, and also some sous vide char siu pork tenderloin in the morning. Tossed some spiralized carrot into a big jar of pickling watermelon rind that was in the fridge. Got hubby to use the rice cooker and make asian cucumber salad while I exercised after work. Browned the char siu pork in the air fryer for 10 minutes, and at the same time sauteed some spinach, chopped some green onion, warmed up the rendang and topped with some toasted coconut I keep in the pantry for garnishing curries.

Grilled pineapple/bacon sausage, black beans w/shallots, sliced tomato and chopped Asian slaw. The sausage was made in house at the newer butcher I go to. I thought the pineapple made it too sweet but the bacon provided a nice smoky taste.

Hubby cooked. Dutch andijvie stampot (=mash with curly endive) and a poached smoked sausage.

Air fried flounder coated w/gluten free flour, gluten free breadcrumbs and rice seasoning (furikake). Steamed rice w/soy sauce and more rice seasoning. Nigori sake. I don't think we've ever steamed rice w/soy sauce before but it was quite flavorful. I added more furikake, wasabi salt, black sesame seeds and ponzu to the rice. The photo makes the fish coating look like it wasn't cooked but it was.

Beef & chorizo burgers with chilli cheese and barbecue sauce. On top of a mixed leaf salad with feta, red onion, plum tomatoes, gherkins, sesame seeds, dried dill and dried chives. I can’t wait to make it again! On more carby days I’ll halve it and put it next to sweet potato fries.

River trout mi cuit fell apart a bit, trout skin cracking. Smashed potato, smashed cucumber. Wasabi yoghurt sauce and thai seafood dipping sauce.

Chicken & vegetable tray bake! Nice and simple - thighs, sweet potato, red & yellow pepper, red onion, plum tomatoes. Seasoned with olive oil, paprika, sumac, dill, parsley, garlic & onion powder. All on one tray at 180c for half an hour. Topped with feta, balsamic & sesame seeds.

It’s so hot today and I had a massive headache, so I couldn’t face preparing my own food. Was amazed to find a new place on Just Eat called Macro Cafe who do whole food healthy meals, and helpfully list all of the macros for each dish! Ordered a steak & cheese salad, roasted vegetable & halloumi hotbox, and a chocolate & peanut butter protein shake, 1300 calories for all! I will definitely be using them again.

Salmon w/sauce of hoisin/soy/garlic, brown basmati rice w/same sauce, chopped salad w/citrus honey vinaigrette (Simple Truth Organic salad kit).

Warmed up leftovers from the weekend. Sous vide osso buco, andijvie stampot (mash with curly endive). Green salad with blue cheese and candied nuts was made up fresh, almost. I keep a jar of caramel coated nuts in the pantry for pimping up salads containing salty cheese and we keep squeezey bottle of vinairette and other dressings in the fridge.
