Sunday breakfast and lunch:
Quick breakfast was just a quinoa flake chocolate chip cookie (I made some the other day) and coffee. Like this one...
Lunch was leftover roasted chicken and garlic parmesan green beans. I made some veggie pasta Alfredo to mix in. Honey crisp apple slices on the side. Cleaning house to get ready for Thanksgiving - eating on the fly today...

Had dinner at a girlfriend's where food had to appeal to her 5 year old. Lasagna cupcakes and salad.

Tonight, Italian-themed melange of roast veg with baked chicken. Veg (onion, green pepper, zucchini, tomato with Italian herb & EVOO) formed a trivet layer in bake pan, and got about 12 minutes head start before being overlaid with chicken breast cutlets with a "Tuscan" spice coating to finish roasting for another 40 mintues. Oh, and side of baked blue potatoes. Very tasty and healthful, pretty simple too.
Now to start on the holiday prep ...

Air fryer copycat KFC from the Chicago Tribune recipe. I keep a jar of the spice mix in the pantry which is mixed 2:1 with flour when needed. Smashed new potatoes and sauteed tenderstem broccoli and snow peas with Chinese olive vegetable.

Shake - beet-spinach-red kale- celery- collagen peptides.
Not shown / a few sardines and microgreens on a plate for added omegas and protein. 😬

Linguine with mushroom, cheese, truffle and artichoke pesto dragged home from Siena vacation last month. Salad of cherry tomato, roast paprika, mozarella and olives.

Homemade salt beef that I pulled out of the freezer, sliced and warmed up in the microwave. Air fryer roasted veg was a mixture of butternut squash, carrots, and potato tossed in olive oil. The carrots and potatoes were parboiled for 3 minutes first. A little bit of salad that was lurking at the bottom of the fridge with ranch.

Thanksgiving eve:
Fresh bluefish 🐟 fillet and cauliflower. I indulged and picked up my fav French butter which I used on top of both. I need an emoji for “chefs kiss” hehe

I was “late” getting to the cafeteria and they were out of entrees so went through the sandwich line. Turkey/cheese/salami/lettuce w pickles and jalapeños on the side. Stopped at the panini press too.4 -

A colleague came over for a Chinese cooking lesson. We had some other colleagues over as volunteer eaters of the output. Contact fried ginger and spring onion fish, beef with black bean sauce, green beans stir fried with Chinese olive vegetable, smashed cucumber salad with black sesame dressing. We had rice with that. Dessert of store bought coconut ice cream with miso caramel sauce and sesame brittle not pictured.

Friday night my husband always want to eat out because he says it makes the weekend feel longer. We went to a European "sharing plates" place near the flat that we liked a few years ago. It's now overpriced with horribly affected service.

Grass Pea soup (Zuppa di Cicerchie) made with Cicerchia beans from Rancho Gordo. Doesn't look wonderful, but it's great comfort food, I couldn't get enough of this soup. I added extra olive oil to meet my macros.

Cottage Pie (heavily altered from the recipe I found in The Real Meal Revolution cookbook). The recipe uses cauliflower in place of potatoes, and I decided to replace the butter with olive oil. Wasn't sure that this particular change would work well, but I like it a lot. Also I've become quite fond of having my cottage pie on top of a nice fresh salad. I love the contrast between bright, cool crunch and soft, hot comfort food.

Moro Bean Soup. I made this after reading customer Emily's comment on the Rancho Gordo page for the Moro Bean variety. Lots of spices... a beautiful bean soup, and absolutely scrumptious. Emily can cook, that's for sure!

Parmesan Chicken Pieces with Roast Garlic Tomato Mole from The Real Meal Revolution. (The blog I linked has the recipe but they made a small change, doubling the amount of butter used for the chicken. I used olive oil instead of butter.) Also the book goofed by calling mole a "Spanish" sauce... it's a Mexican thing and its roots were in indigenous, not Spanish, cooking. What's more, the sauce for this recipe doesn't even contain chili peppers, so it's not even a mole to begin with. Sure was tasty though, and I will definitely make this again. Side of spinach sautéed in olive oil & garlic.

This one's not technically a meal I guess? Waldorf Astoria Cake which is similar to Red Velvet Cake, but with boiled icing instead of cream cheese icing. This was a new discovery for me and I had to try it out. It was light and delicate, not overly sweet, a very nice cake. I do like regular Red Velvet Cake too. This slice was my first dessert in five months, and I really enjoyed it. Now back to regular meals for a while

The NYT published an alluring article a few months ago about how to flambé foods... so I decided to try the Steak Diane (side of arugula & carrots, with a bit of the steak sauce for dressing) and the Cherries Jubilee (omitting the sugar, ice cream, and pound cake). A very festive and fun dinner. I had a little bit of red wine with the steak & salad, and enjoyed playing around with the camera too.

Easy Keto Salmon Patties... I had bought a couple cans of salmon a while back, which I realized was a mistake as soon as I made a meal with the first can. I like salmon and I like other kinds of fish in cans, but canned salmon is not for me
Anyway, as I still had a can left, I decided it was time to get it over with... so I made a mediocre salad with half of it, and then I turned the second half into these salmon patties. Sadly there was no room left in my macros for the aioli, so I ate the patties by themselves. Not bad, but not something I would choose to eat again. I'm not a fan of crab cakes either, so this is no great surprise, but I thought the recipe was worth a shot.

Food was okay but not worth £115 for five small sharing plates with wine. The best dish was the deep fried cod cheeks with alioli. I don't deep fry at home, so that was kind of a treat. The split peas under the butternut squash were good too. Mussels were a perfect texture but lacking in flavour especially as the menu mentioned nduja and gremolata in their preparation.2 -

Food was okay but not worth £115 for five small sharing plates with wine. The best dish was the deep fried cod cheeks with alioli. I don't deep fry at home, so that was kind of a treat. The split peas under the butternut squash were good too. Mussels were a perfect texture but lacking in flavour especially as the menu mentioned nduja and gremolata in their preparation.
I live in a very different world from you apparently. I can't imagine paying almost $75 per person for a meal, plus tip I presume. Even if I went out to eat once a week (I don't), I could go nearly a month for that much, and I'd enjoy every bite. A few weeks ago, I drove 20 miles to a taco shop because it was Tuesday, and they always have four different tacos for $1.50 each - they rotate which ones are on special. Our local tavern offered up a full Thanksgiving meal for twelve bucks, plus three more if you wanted pie. For sure I wouldn't pay that much if the food wasn't good.
I'm saving up to go back up to that hot springs resort I visited last month. For about $120, they feed me three meals, give me a place to sleep, and let me soak all I want for 24 hours. It's an amazing place, and the food is always very good. No wine though. And it's all vegetarian, so no mussels or cod cheeks.
There is a restaurant on the coast that I really love. Only once did I order the Fishwife Stew. It's now up to $40, but it's almost worth it. It's a huge bowl of seafood (dugneness crab, pink shrimp, prawns, scallops, clams, rockfishwith, and scallops) in a tasty broth of wine, tomato, saffron, and herbs. Maybe every few years I'll treat myself to a bowl for a special occasion, but it would have to be a very special occasion.

Salad of cherry tomato, roast paprika, mozarella and olives to start. Pici pasta with cheese, mushroom, and artichoke/truffle pesto with a side of sauteed green beans. Pici (a very thick noodle shape similar to udon) and the artichoke/truffle pesto was stuff we dragged home from our vacation in Siena last month.

Cassoulet Style Lamb Shanks and Beans -- I used Rancho Gordo's Cassoulet (Tarbais) Bean and added a side of red cabbage with apple & onion (own recipe). Everything was delicious and harmonizes well (I wasn't sure this combo would work, but omg so good). The beans are underneath the meat, so you have to kinda look for them They came out rich and creamy, I'm a fan.

Three-Cup Chicken with a side of bok choy cooked in sesame oil, tamari, garlic, and ginger. I omitted the sugar from the chicken recipe. This is my second time with the Three-Cup Chicken, and I quite like it.
