Burgers with manchego, air fryer oven fries, copycat KFC slaw, cucumber salad.

I don't know what to call this, except a good-tasting, unplanned dinner using assorted pantry items. Valentine's Day didn't unfurl as expected (nothing bad at all, just "stuff"). So, faced with making dinner at home instead of a dining-out occasion, I surveyed the possibilities and threw together this experiment. "Hot Pasta-Veg-Bean Salad"? "Soupless Pasta Fagioli"? "Vegan Melange a la Extremis?" Whatever. Elbow pasta, fresh and frozen veg, canned diced tomatoes, canned kidney beans, aromatics and seasonings. Started off a bit soupy, but the cooked-in-the-veg-pan pasta nicely soaked up the liquid and became quite flavorful. MFP computes this bowl ("2 servings" according to my recipe input) as about 561 cals, 22g protein, 9g fat, 98g carb with 17g fiber. Under an hour, including chopping the veg. Could've been a lot worse. Leftovers for tomorrow. Maybe then it'll be just "Pasta-Veg-Bean Salad" (no longer "hot" LOL).

No photo, but I did cook chicken tikka masala today, and it turned out super good, apart from not having a tandoor, and not even something to road food. But it did work out very well. One serving (of three) comes in at 550 calories with rice.6

We went out for my birthday, which was actually yesterday. We have learned to avoid restaurants on my actual birthday Feb 14 with their overpriced Valentine's menu's.

The last dish was a grilled pork chop with an amazing sherry sauce that had a faint taste of caramel. On the side was a cheesy cauliflower puree which for my taste was overseasoned. Topped with surprisingly tender, yet not overcooked brussel sprouts. Have no idea how they managed to cook those.3 -
Leftover management: pork tenderloin with Italian salsa verde, Mediterranean salad, a whackload of zucchini, and a sidecar of pineapple
Thanks for the suggestions on dicing though the majority of my trouble on Saturday was not mechanical, but multitasking. I think I had 10 dishes in some phase of prep, more or less simultaneously. (but I've got a lot less to worry about tomorrow and Tuesday)

Tapas dinner again. Spanish tortilla made with a medium onion, a large baking potato and three eggs. Salad of peeled roast paprika, roast cherry tomato, capers and pepitas. Another weird salad from the Washington Post with celery, white beans, roast mushrooms, feta and mint. Some charcuterie we had lying around the fridge.

I just did cilantro and Greek yogurt this time but Peruvian aji sauce is really good too! Definitely going in the rotation.2 -
Work trip to Dallas. I’m originally from south Texas and was a bit nervous going back (left for a number of reasons). The food was great though! Managed Tex-mex 2 out of 3 nights and my heart is happy.6 -
My Japanese dinner party has been postponed until the first week in March, so I am still practicing. Discovered tonight that switching around courses to have the handrolls first, followed by udon+kakiage is much nicer. Kakiage was oilier and less crispy than last attempt but am not sure why. Last time I formed them on a pasta server which let batter drip out better than the flat spatula I used this time. Also batter was maybe thinner. Also discovered that it is still easy to overcook tataki even with a blowtorch. The addition of air fried salmon skins (a waste product from the tataki) was a good crispy addition to the hand roll offerings.

Simple dinner for a Saturday night ... baked Italian-herb chicken breast, roast spaghetti squash, tom/cuke salad. MFP computes this plate (plus a dose of grated cheese not shown) as about 510 cal, 45g protein, 23g fat (includes EVOO), 29g carb with 8g fiber.

Leftover temaki from last night rolled into futomaki for lunch. Apologies to any Japanese people as putting wasabi directly ino the soy sauce is apparently considered to be horrible table manners.
