Hi All,
My name is Doug. New here. Looking forward to picking up some healthy food ideas, recipes and friends! Today’s meals:
Breakfast
Poached Eggs topped with a creamy blend of lime-infused avocado and non-fat Greek yogurt, paired with crispy, turmeric-seasoned sliced turkey and a garnish of fresh strawberries.
Lunch
Walnut & Medjool Date Chicken Salad, Topped with Mozzarella Strings and Finely Shredded Baby Carrots, layered over a Creamy Avocado and Greek Yogurt Crema on a Toasted Almond Bread Wafer. Garnished with Fresh Parsley and served alongside an assortment of fresh berries. Healthy and delicious
Dinner
Mushroom & Snow Pea Chicken tossed in a fragrant soy-ginger glaze, enhanced with a hint of honey and sesame and served atop a bed of finely riced cauliflower.7 -

I’ve been obsessed with butternut squash and avocado lately. Tossed squash strips with some EVOO and herbs de Provençe. Tried to get them nice and crunchy.
Added in an egg for extra protein. Voila breakfast. 🍳 ☺️

Do you ever make braised eggs instead of fried? I love 'em. Easy to cook, easy to clean the pan, and you can use a little less butter. I also don't burn the edges. Simple process:- Heat the pan as if you're making a fried egg
- Add the butter or oil
- Crack in the egg and immediately add an ounce or 1.5 ounces of water
- Put the lid on the pan
- Set the timer. Two to three minutes depending how cooked you like them.
- Enjoy!

A 10 minute dinner tapas style dinner. Halved cherry tomatoes and a piece of feta drizzled in olive oil and roasted 10 minutes in the air fryer. A red pepper I roasted this morning and peeled later while the feta/tomato mixture was cooking. Some thin slices of serrano ham. Toast.

I love poached eggs.. but I always mess them up. Braised - This seems like a great in between! Will post!

Herb Salad with Pistachios, Fennel, and Horseradish by Alison Roman. I don't usually like raw fennel in salads, but this was tasty! The tender butter lettuce, the lemony dressing, the crunchy pistachios & fennel seeds... yum.

Snack: chicken breast cooked in the pan with a bit of mustard, olive oil, and balsamic vinegar. Plus a piece of slightly melted Petite Breakfast Fresh Brie by Marin French Cheese Co. A delicious combo. (No it's not vanilla ice cream haha)

Spicy Pork and Mustard Green Soup, also by Alison Roman. Szechuan pepper provides a lovely gentle heat that doesn't hurt me, unlike many other spicy things. This soup is a staple at my house, I can't get enough of it (especially the broth... true soul food). I omitted the noodles & crushed red pepper flakes, and used less soy sauce & salt than the recipe calls for.

Escovitch Salmon with Quick-Pickled Vegetables and Carrot Purée by Kwame Onwuachi. Another dish I make often. I usually add a veggie side, but this time I just had it by itself. I use habanero instead of Scotch Bonnet chile, and omit the sugar (the carrots are plenty sweet). I ate all that scrumptious crunchy salmon skin off the fish before I plated it, lol

Another tapas style dinner. Spanish tortilla, Portuguese marinated carrots, tomatoes with feta, Serrano ham, toast.

A really tasty lunch of use-it-ups! The salad is the end of a bag of coleslaw mix, the last of a cucumber, couple of elderly scallions, and the last leaves on a bunch of cilantro. Dressed with a mix of rice wine vinegar, fish sauce, and stevia brown sugar. Chicken is leftover "satay" and a tablespoon of PB2 peanut sauce. About 300 kcal & 30g protein, and a lot of fiber because I put about a third in a keto wrap.6 -
Potato gnocchi made a couple of weekends ago where we froze the excess. Served with the last of the leftover sage and some browned butter. Tomato salad. Tenderstem broccoli with hollandaise.

Super Lucky 2024 Black Eyed Peas cooked simply with onions, carrots, celery, garlic, bay leaf, salt, and olive oil (extra drizzle of olive oil on top). I love these beans, they have a unique flavor (or at least I have never eaten anything quite like it). And they burst when I bite them, I'm trying to figure out what that reminds me of, cherry tomatoes maybe? So fun

As a bonus, black-eyed peas are one of the few larger legumes that you don't need to soak. Adzuki beans are another. Rancho Gordo has some really neat offerings for sure. One of these days maybe I'll splurge and try some.
Yeah, I gave them just a brief soak (a couple hours maybe?), because it fit well into my schedule and why not. I look forward to reading your report on RG's beans, once you decide to take the plunge! I never thought I could LOVE beans, but RG's quality is so good. These beans are fresh (yes, dried... but not left in storage forever). They're beautiful and tasty... and they cook up wonderfully, like no other beans I'd ever encountered before. It truly is a joy cooking with RG products. I also just ordered some of their red popcorn for the first time. Looking forward to trying that, too.2 -
Friday night the hubby likes to eat out as he thinks it makes the weekend feel longer. We went to a gimicky sushi monorail restaurant where the food was surprisingly good.

Hi, I'm looking for some new recipes and meal idea's. Everyone's meals look delicious. Looks like I came to the right place. Here is a little of what I've been eating:Here's the oatmeal, cranberry, and pecans that I had for breakfast.
Avacado deviled eggs
Tuna salad stuffed tomato made with Avacado instead of mayo
Baked salmon, Roasted apple cinnamon sweet potatoes, and Cauliflower.4 -
Short grain brown rice and lentils cooked in one pot and roasted Delicata.
I started the water with the rice and cooked it for about 20 minutes before adding the lentils. I used a little Better Than Bullion instead of just salt.
Meanwhile, I seeded a delicata squash from a friend's garden. I have two more left. I sliced it, tossed it with hazelnut oil, garlic powder, salt, Aleppo chile flakes, powdered ginger, turmeric, and cinnamon. Probably something else too, but... memory ya know.
Roasted at 425F convection for about 12 minutes, then turned each piece and roasted another 12. It wasn't quite done, oddly enough, so I turned one more time, put them back in, and turned the oven off. The baking stones kept it cooking for another five minutes. During the last minute of cooking, I plated the rice & lentils and then put the squash on to join it.
Now all that's left is an empty Fiesta Ware plate and a smile on my face.

Every now and then .. I just need some Creole gumbo.
Easy way to get in lots of vegetables and protein too.
I did a shrimp-crab-andouille gumbo.

Friday night was a self-care night for sure. A much-needed manicure and some Vietnamese takeaway. It was cold and rainy here and the pho was a perfect choice.5 -
🍽️ Liver medallions with purple onion, rainbow cauliflower, butternut squash, microgreens

I get bored with the same old thing so I experiment. I made Mexican stuffed peppers w/ground elk but you can use any protein even squished tofu or chopped tempeh! Add in your favorite Mexican spices and spoon into peppers. Bake them at 400/15 mins. Top with cheese & bake 5 mins. Top with whatever you like. I smashed 1/2 an avocado, added Pico, and 0% Fage. So good!
The 2nd picture is simple: 1.5cups shredded this color cabbage pre packaged, 2tbsp Lighthouse italian dresseing/marinade, 2 baked chicken thighs seasoned w/Mrs Dash lemon pepper, a sprinkle of everything bagel seasoning. Winco has it in bulk. This is 355 cals/ 51g protein/8 carbs/12 mg fat. Crunchy, fresh, and tasty. Sometimes I toss in green onion or Cilantro.

You dropped this @AmberVanSweden FYI when you hit "upload image" and then you move the cursor before the image has finished uploading, it will drop it into whatever spot the cursor has moved to. In your case, you had moved the cursor into the middle of your first image link, so the link broke when the second image got inserted into it. Welcome, and your food looks yummy!

A girlfriend came over and we batch cooked coca cola chicken (=cheat's teriyaki) with daikon, onion and green pepper. Sides of stir fried bok choi and white rice. Dessert of tinned lychee sorbet with a store bought Chinese egg roll cookie.

A colleague wants to come over for homestyle Japanese food in a couple of weeks. Practiced sushi served family style with roll your own California handrolls and a side of messy looking mushroom yakitori. I learned the family style sushi from a half Japanese girlfriend.
