Breakfast protein options other than eggs?

I’m struggling with my breakfast protein — I love eggs, but they make my eyes a little puffy and my throat a little itchy. I’m not allergic but I do have an immune response to them, like a food sensitivity. I would eat nothing but boiled eggs all day if I could, buuuut I’m trying to combat my inflammation too during this journey. I have similar reactions to chicken, but less intense. I think I need to start eliminating eggs, and I am just wondering what everyone else is doing for breakfast protein?

Whey powder. Mixed in with my overnight oatmeal, or separately with water or a little milk otherwise. Or add a banana and other fruit to make it a breakfast meal.1

Greek yogurt, meat/fish if you eat those (I don't), quinoa can make a contribution, . . . remember, any food you like can be eaten at breakfast, it needn't be official breakfast food.
