Just read this and had to try them. I love to bake and have really missed it since I cut out flour and wheat.
These were delicious
But being from England I had to look up a few things like on an English celsius oven the temp would be set to 175, and as I had no Baking Soda I used 2ts Baking Powder...mine still turned out great and Ive frozen half the mixture to used at a later date.

I made these tonight with 1/4 c. Trader Joe's natural (unsweetened) peanut butter with roasted and salted flaxseeds, and 3/4 c. organic unsweetened tahini (didn't have enough PB left).
OMG!!!
57 cals each; yield was 40 2.5" cookies! delish!!
WARNING: I just ate 1 cookie's worth of dough, and 4 baked cookies. Good thing they're only 57 cals each and I had the calories left
