Low cal Chocolate Crepe
I came up with this recipe for a low cal chocolate crepe:
2 egg whites
1/2 mashed banana
1 Tbspn. unsweetened cocoa
1 pkg. sweetner.
1/2 tspn. oil
1. Mash the banana really well with a fork
2. Mix in the dry cocoa and sweetner to the banana
3. Add the egg whites to the mixture and beat up all ingredients with a for about a minute.
Grease 8" non stick frying pan with 1/2 tspn. of oil and then wipe out most of the oil with a paper towel. Heat pan on medium and Swirl in the mixture till it covers bottom of the pan. Cook on medium/low till done. It's really tricky to cook this crepe and flip it over - so keep a very close eye on it while it's cooking and adjust heat accordingly.
After the crepe came out of the pan and was still warm I spread 1 Tablespoon of Smuckers No Sugar Added Jam on top and then I rolled it up to create a log. Then I cut the log into thin slices. I think the whole thing is about 160 calories.
It was pretty good but I'd love some input on how to improve this recipe

Here is my favorite crepe batter:
1/2 cup all-purpose flour
1/4 tsp salt
1 egg, lightly beaten
2/3 cup of nonfat milk
One crepe: 57 calories, 1 gram fat, 9.3 carbs, 3 grams protein
Then I take a sugar free chocolate pudding, mix it with 1 Tbsp fat free Cool Whip, and roll that inside my crepe. Then I top that with a banana. It's DELICIOUS!0 -
