I am happy to see so many people showing progress. This week we had three people reach their goal weight! With one week left and many other people close to their goals I am sure we will see even more!
Our biggest losers for this week are as follows....
Chancie72 is our biggest loser with dropping 2.8 pounds this past week! CONGRATS!!!!
Our second place person is Melanie12081 with an amazing 2.4 pounds over the past week.
Third place goes out to kcthatsme with 1.8 pounds missing in one week!

For this week's optional challenge I was thinking maybe a switch from the usual exercise challenges (not that they aren't good to). How about taking a familiar recipe and remaking it into a healthier version? Then we could post (if we want) the results.0 -

Here is my version of a healthier lasagna-
zucchini lasagna
the entire lasagna as I made it was 1783 calories- divided into 6 portions it is 297 calories per portion. It could be even less calories by replacing eggs with eggbeaters and possibly eliminating the margarine.
Fresh Veg - Green Zucchini, Raw, 3 medium
Fresh - Portobella Mushroom, 0.25 container (8 oz.s ea.)
Generic - Onion Raw Chopped 1/2 Cup, 0.5 cup 3
Classico - Tomato & Basil, 1 container (3 1/2 cups ea.)
Great Value - Fat Free Cottage Cheese , 1 container (3 cup (116g) ea.)
Food Club - Mozerella Cheese Low Fat 2%, 0.86 cup
Sunny Farms - Large Grade A Egg, 2 egg
Generic - Garlic, 1 tsp
Blue Bonnet - Light Butter (Revised), 0.5 tbsp
Cheese - Parmesan, grated, 0.5 cup
Great Value - Frozen Cut Leaf Spinach, 0.5 container (6 cups ea.)
Slice zucchini lengthwise into very thin slices. Sprinkle slices lightly with salt; set aside to drain in a colander.
sautee the garlic, mushrooms and onion in margarine.
mix mozerella cheese, cottage cheese, eggs, and italian seasonings (not listed in ingred.)
layer like regular lasagna- start with sauce, use zucchini slices in place of noodles, cheese, spinach, mushrooms, repeat layers top with parm. cheese
layer in sprayed casserole dish and bake about 45 minutes at 325 (covered with foil if desired)0 -
