    I just made a really yummy and super crockpot meal for dinner tonight.

    4 frozen chicken breasts
    1 can black beans
    1 can corn
    1 16 oz. salsa
    1 tsp. cumin
    salt to taste
    3 oz. light cream cheese

    put chicken on bottom (still frozen)
    everything else goes on top.
    8-10 hours. Done!
    take tongs, and tear apart the chicken. It was so yummy! You could eat it like a stew, drain some of the fluids, and put it in a tortilla, over a salad, over some multigrain tostitoes!
    I made some brown rice and poured it over, added a dollop of light sour cream.
    Voila, and I think it's only around 200 calories!
