Aggie's Healthy No Bake Chocolate Oatmeal Cookies/Picture

My variation of a similar recipe cuts down the sugar, fat and sodium tremendously. Enjoy.

HEALTHY NO BAKE CHOCOLATE OATMEAL COOKIES

1/2 cup light brown sugar
1/4 cup Smart Balance - Light Extra Virgin Olive Oil spread
1 teaspoon vanilla extract
1/4 cup cocoa powder
pinch of salt
1/4 cup unsweetened almond milk
1/2 cup of creamy peanut butter
3 1/2 cups of oats (quick - 1 minute)
Powder sugar, for dusting, if desired

Line a cookie sheet with parchment paper, set aside. Combine light brown sugar, Smart Balance, vanilla, cocoa powder, pinch of salt, and almost milk in a medium saucepan over medium heat. Blend well with a wooden spoon. Bring to a boil, lower heat to simmer and simmer for 1 minute. Take off heat. Immediately stir in peanut butter and oats. Mix until well combined. You end up with a blob of sticky goodness. Roll into balls while dough is warm and flatten to create a pretty medallion. Most likely the edges will be uneven, so press them inward, into the cookie, with your finger creating a perfect circle. Place on parchment paper, and let cool. (In my opinion, these these taste better the next day) Dust with powder sugar is you desire. ENJOY.

Recipe makes 24 cookies

Per 1 cookie: 103 calories, 5g fat, 14g carbohydrates, 5g sugar, 3g protein, 36mg sodium

    what would be a good replacement for the Smart Balance Olive Oil spread? I don't have it and I'm not crazy about using margarine in its place.

    coconut oil maybe? It's got more calories and quite a bit of fat, but some swear by coconut oil's saturated fats... I know I use a lot of coconut oil.


    I'm curious if these harden up as well as the original. I had learned it was something in the milk (casein) that had a reaction with the sugar that made it get hard...

    I would just use any other milk :) I think almond milk is used because it has the least calories.

    Thanks for sharing! My friends and co-workers love my cookies (the not-so healthy kind) so I look forward to trying this and maybe not telling them that they're healthy lol

    While almonds are mostly sedentary, and thus easy to catch, you must have tiny hands, and keen eyesight to find their wee udders.
