Pudding-Cool Whip Fluffy Frosting

I saw this recipe on pinterest and it has 2 of my favorite things: pudding & cool whip!

Take sugar free instant vanilla pudding and mix with HALF the amount of milk it calls for. Mix until it gets a little density. Then fold into fat free cool whip.

It is so yummy! It can be used as frosting for cake or make "ice cream sandwiches" by spreading it onto 1/2 graham cracker rectangle and top with other half. Then freeze. I do this with chocolate graham cracker squares (an old WW recipe from years ago)

BTW on pinterest, it said use any size you want - small vanilla mix with small tub of cool whip or large vanilla mix with large tub cool whip. Use any flavor pudding as well - vanilla, french vanilla, chocolate - whatever your heart desires!

I put into recipe builder and it comes out at approx 43 calories per serving (that's if you had 12 cupcakes). You might find the calories to be a little different.

I read about this somewhere before but they failed to mention the adding milk part! So I was trying to mix dry pudding mix into cool whip, it failed! This sounds like it would work nicely!!

I recently found a recipe where you do this but divide it in mini muffin pan, drizzle with chocolate and freeze. Then pop out for a treat. I think they're 1 point Weight Watchers

That sounds really good and probably a lot more healthy than this recipe for frosting shots
    http://chocolatecoveredkatie.com/2012/01/16/chocolate-frosting-shots/

It tasted as good, if not better than mousse made with heavy cream. I might try making it with low-fat cococnut milk to see what happens
