Made this tonight and it was yummy! I'll definitely be making it again. I wish I could add more veggies to it, but my kids are way too picky for me to add chopped peppers or anything else. I think it'd also be good with broccoli.0

Sounds delish ........but I did my own calculation, used Egg Beaters versus eggs, 50% less fat cheddar ( Cabot) and omitted the leeks and peppers and subbed 2/3 cup peas, used pre-cooked bacon and it was 392 calories!0

Quinoa is a high protein, ancient grain that can replace many pastas and rices.
I use it in many dishes including salads and pilafs as well as burgers, even flour can be
made from it as a gluten-free subsitute.
I just thought I would add this for the folks who weren't sure what quinoa was.
