    Made it and i have to say it looks nowhere near as good as that picture. It got poor revoews in my house. Hope it goes over better with you guys.

    Me too...I had such high hopes...they said the blueberries were good,but the oatmeal part was rubbery!

    Not sure it would. The egg provides much of the structure and the protein for this muffin. Might be better to go with silken tofu or a milk alternative well thickened with flour.
    bump... I'm pretty sure a flax egg would work and make this vegan! Yum!
