    Looks very good!! If I hadn't already had an english muffin this morning I would have tried it!! I will tomorrow!! Congrats on your weight loss, it looks like you are doing well!! I've lost 13lbs. in a little less than 2 months with 40lbs. more to go. I know the rest will come off a lot slower! This recipe might help with that.

    Here is a good idea for breakfast or snack!

    1/4 cup quick oats
    1 egg (sub. 1/4 egg beaters for less calories)
    small handful of blueberries
    little bit of brown sugar/stevia (optional)
    tbsp soymilk or regular milk(for added moistness!)

    Mix it all up into a coffee mug!

    Put it in the microwave for 1 minute, make sure it doesn’t overflow! Add an extra 30 sec if it needs to firm up.

    Very creative, looks delicious!

    Mine was not as pretty as the OP's. I didn't make it with blueberries either. I was rushing so I added some PB2 and a few chocolate chips; also forgot the milk. I over-cooked mine but still ate it. It was tasty and pretty filling. Next time I will make it right! LOL.

    I love this idea! And the fact that you can change the ingredients is a huge plus! I'm can't wait to try the blueberry as well as banana nut, pumpkin, apple cinnamon, etc.
