    Here is a good idea for breakfast or snack!

    1/4 cup quick oats
    1 egg (sub. 1/4 egg beaters for less calories)
    small handful of blueberries
    little bit of brown sugar/stevia (optional)
    tbsp soymilk or regular milk(for added moistness!)

    Mix it all up into a coffee mug!
    Put it in the microwave for 1 minute, make sure it doesn’t overflow! Add an extra 30 sec if it needs to firm up.

    ooh! had this for breakfast this morning! didn't have any milk though, so i threw a bit of unsweetened applesauce on top after I took it out of the microwave... was delish! Could totally have this as a dessert too!

    mine looked very similar. egg whites seemed to settle on the bottom making it abit rubbery texture. And it wouldn't stay together... I'll try again though
  • Thank you so much for posting this recipe. I have made it for the 2nd day in a row and love it....was starting to get bored with the same old breakfast.

    Anyway, I didn't have any blueberries so I used blackberries....Yum :)

    It was absolutely divine! I used a mixed berry frozen fruit -- added a dash of cinnamon, and a little flax seed. Then when out of the cup, topped with 1/2 container of greek yogurt and a few slivered almonds. OH MY GOSH! And sooooo easy! Thank you so much for sharing this recipe.:flowerforyou: :flowerforyou:
