I have never been a big veggie eater and have not tried many different ones since I started my weight loss.
I want to know what new veggies you have tried and love now?

Roasted Asparagus is the one veggie I was never fond of, but love it now.
I put the Asparagus in a roasting pan, drizzle with coconut oil, sprinkle sea salt and fresh cracked black pepper and throw it in the oven for a bit until it starts to brown..........0 -

I like just about anything roasted. Toss in olive oil with some salt and pepper and roast at 400 until bits start to brown. Broccoli is especially good - I'd never thought to roast it until it was a middle step in a broccoli soup recipe I made last year. I was a little sad to blend it up!
I also really like sauteed spinach with garlic and tomatoes.0 -

Bok Choy is yummy - I bet you've had it and just don't know it. Lots of chinese dishes use bok choy.
Not a fan of brussel sprouts ..... perhaps I need to try them roasted.

anything roasted.. OBSESSED with brussels sprouts with pancetta and shallots.. YUMM!! I like adding bean sprouts to pasta because it gives it some added texture i love0

Roasted veggies of any kind - asparagus, cauliflower, broccoli
I just drizzle some EVOO on them and sprinkle them with a little bit of kosher salt and it's delicious!!!
Oh also very into eggplant now too. I never thought I would like it but I do!!0 -

We eat Kale ALL the time....its so good! I sauté with coconut oil and onions and in a separate tiny pot I cook down balsamic vinegar, which will turn syrup like and have a sweeter flavor! Even my kids eat the kale with the reduced vinegar. Sometimes we use just kosher salt and grated cheese.... yummy
My next adventure is to make Kale chips, but I want to use fresh Kale not prepackaged0 -
Curried cauliflower. Lightly steam the cauliflower and set aside. Saute chopped onions and fresh ginger. Add curry powder to taste and cook for a minute or two. Add the cauliflower and some raisins. Deelish!0

My DH and boys don't either So I am making it for my lunches. There are lots of things I love that the family won't eat but I must have my eggplant and mushrooms! I love the freezer0

Okra! I learned how to make Bhindi Masala and I'm hooked. I'd never had okra before! It's so healthy too with just spices and a little oil.0

I have never been a vegetable eater (other than green beans) up until January of this year. My favorite is eggplant - the eggplant parmesan II from allrecipes is awesome; I use half the bread crumbs, bake it for 7 minutes each side (I first do the sweating process on the eggplant); I use a mixture of 2% and fat free mozzarella with 1/4 cup of real mozzarella. It's fantastic (I actually gave it away to three different people last time I made it). My other new-found item is herbed spaghetti squash. It's like "free food"!0

Sauteed Brussel Sprouts. I wouldn't touch them until someone told me to make them this way.
I slice them up thin (like cole slaw), then drizzle about 2 tsp of olive oil in a pan. Cook them up with some sea salt & pepper until they are brown at the edges.
SO GOOD!!! The house smells bad, but the sauteeing makes them taste a bit sweet.
Also love roasted asparagus and I never thought I'd like that.0 -

Green beans used to be my favorite, now it's spinach. I love to sauté it with mushrooms and garlic.
I used to hate all peppers. Now I love red & yellow peppers. Still hate the green ones though.0 -
Cauliflower! I parboil some cauliflower and then throw it in the oven with chopped garlic, salt & pepper, lemon juice, lemon zest, chopped black olives and a little bit of feta (parmesan works too). It is really good with roasted garlic too if you have time to make that beforehand and use it. You can omit the salt if you need to. I could eat this everyday.0

Eggplant Parmesan is very versatile and pretty easy. You can add meat or not, change the cheese, add other veggies, whatever you want This is my first attempt in the crock pot though. . . we'll see how it turns out.0
