Don't knock it til ya try it! ;) There's a whole world of foods out there - and you don't have to be vegan/vegetarian to enjoy them!
Those stuffed peppers look sooooooo amazing!

Thank you! They taste even better than they look!

Sorry for the terrible camera phone quality, but this was just too good not to share!

Roasted Beet Burger (79 cals and 6.2g protein! How you like them apples?) on a wheat sandwich thin, topped with avocado and mustard. Honkin' side of baked sweet potato fries.

    I just annihilated this.

Cook the onion first and then add the tomato purée. Once golden coloured, add water. The amount depends on how much to make. I made enough for 3 curries so added a 3/4 to a pint/568ml of water. Add vegetables and then the curry powder and herbs. Cook for 30 minutes, the water will reduce.

    Found the recipe.

    N'est pas un problem! :)

I used this recipe from The Fat Free Vegan: http://blog.fatfreevegan.com/2009/09/roasted-beet-tofu-burgers.html

They freeze beautifully, and the color is just incredible - the photo from my phone doesn't do it justice!

This is the recipe that I was hoping to find! I have a bag of corn tortillas and had no idea what to do with them. Thank you for sharing!

Here are 3 I have...sorry no photos..but all are yum! Enjoy!

    Black Bean Enchilada Casserole

    Serves 6
1 cup (4 ounces) shredded reduced-fat Monterey Jack cheese, divided
1 cup cooked brown basmati rice or long-grain rice
    1 cup fat-free sour cream
    1/2 cup chopped fresh cilantro
    1/3 cup chopped green onions
    1 teaspoon ground cumin
    1 teaspoon chili powder
1 (15-ounce) can black beans, rinsed and drained
1 jalapeño pepper, seeded and chopped
1 (19-ounce) can red enchilada sauce
    Cooking spray
    12 (6-inch) corn tortillas
    Preparation
    Preheat oven to 350°.

Combine 1/2 cup cheese, rice, and the next 7 ingredients (rice through jalapeño) in a large bowl. Spread 1/4 cup enchilada sauce in bottom of an 11 x 7-inch baking dish coated with cooking spray. Heat remaining enchilada sauce in a skillet for 2 minutes or until warm, and remove from heat. Dredge both sides of 6 tortillas in warm enchilada sauce, and arrange tortillas, overlapping, over sauce in baking dish. Top with 1 3/4 cups bean mixture. Dredge both sides of remaining tortillas in warm enchilada sauce, and arrange tortillas, overlapping, over bean mixture. Top with the remaining bean mixture, remaining enchilada sauce, and 1/2 cup cheese. Bake at 350° for 40 minutes or until bubbly.

I know these aren't really meals. I'm sorry, but I am a baker by heart, and make some killer vegan treats.

    e1f85v.jpg
Apple cider, vanilla bean and chocolate orange cupcakes

    a3ywwl.jpg
    hazelnut chocolate cupcakes

    2w69ml0.jpg
    rosemary lavender bagels

    nua77.jpg
    fancy French bread

    iyzvxl.jpg
    pumpkin cinnamon rolls

    2mz0ao0.jpg
And finally a shiitake-ginger soup with kale and tofu.

We do eat real food occasionally around here. All photos of food are vegan too!
-please tell me the sizes are better now-

Here's a new recipe I just tried that's good - Vegetarian and Gluten Free

    http://www.lifeasaplate.com/2012/02/20/asparagus-quiche-with-a-savory-sweet-potato-crust/

I don't have a pic of mine, but there's one on the recipe site and mine actually looked like that.
