French onion soup and basmati blend rice mixed with broccoli, bok choy, and a few other veggies.... Oh and pink food coloring (I WAS FEELING COLORFUL)
Under 300 calories and so filling.
I love that you used pink food coloring just to add some pizazz to your meal! So cute Wish I had some yummy food pics... I'll do some searching.0 -

Some of my pictures aren't pretty, but here you go. I really wish I took them more often but I don't think about it as I'm making stuff. I made a yummy cornmeal pizza last weekend, would have made a good pic! This thread is making my mouth water!!!

Sorry for the terrible camera phone quality, but this was just too good not to share!
Roasted Beet Burger (79 cals and 6.2g protein! How you like them apples?) on a wheat sandwich thin, topped with avocado and mustard. Honkin' side of baked sweet potato fries.
I just annihilated this.
I used to LOVE sweet potato fries from a BBQ restaurant that made their own spicy ketchup to go with them. I make my own mixture of ketchup and chipotle tabasco. So amazing!!!!!0 -
They all look very delish. Thanks for sharing.0

I blogged some meatless dishes last week as part of my Cupboard Cleanout week, but of course didn't take pictures! Are links to recipes OK? Some of the ingredients are weird because the point of a Cupboard Cleanout Challenge is using what you have and not going grocery shopping. The 2 dishes that came out the best (wheat-free):
Berry Oatmeal: http://snarkylawyer.wordpress.com/2012/03/02/cupboard-cleanout-day-4-raspberry-oatmeal-leftover-lunch-cocktails-at-home-easy-crock-pot-chili/
I ended up adding 1/3 cup each cooked quinoa and brown rice, and topping with pistachios.
Veggie Fajitas: http://snarkylawyer.wordpress.com/2012/02/29/cupboard-cleanout-day-2-veggie-fajitas/0 -
