    Do I have to pick a favorite??

    Asparagus and Zucchini would be my top 2. Zucchini I will eat any way I can get it (even raw) and asparagus is awesome roasted in the oven with just a little olive oil and some kind of seasoning on it. Yummo!

    Asparagus or spinach.

    I love asparagus in pasta or grilled with garlic seasoning. I love spinach in salads, smoothies, pastas, soups and sometimes just eat it raw

    Wrap in tin foil, bake @375 for about an hour. All the goodness in one little package. Take them out, let them cool a bit, run them under water while you peel off the skin with your thumbs. Slice, and a little bit of butter & salt. Mmmm, I'm drooling!

    Tough choice. I love spaghetti squash (just put 1-2 tablespoons of parmesan cheese, a little pepper and basil and you're ready to go!/some spaghetti sauce with a little parmesan), zucchini and squash are amazing (I love to slice and saute them together--just add a little sea salt for flavor), mushrooms can go with about anything, tomatoes I keep finding more and more uses for, etc. Difficult question, but a good one!

    My favs are broccoli, zucchini and mushrooms. Love them in stirfry!! One really easy recipe for zucchini is to cut it into slices - place a layer on the bottom of a baking dish, cover with a slice or two of cheese add tomato sauce, another layer of zucchini, cheese and tomato sauce and then bake! I've also added mushrooms in with the tomato sauce. So good and very low cal!!!

    Eggplant for me. No one seems to like eggplant. *sadly takes her eggplant and hides in the corner* ;)

    Oops, forgot to say how I like it. My mom used to saute it with lots of onion, garlic, cumin, red peppers and thinly sliced potato (which I omit most times) and we ate it with flatbread all the time in Trinidad. Now I have it with some pita or even on its own like that.

    Got to be carrots. I eat them every single day. I love raw baby carrots, or they can be cooked.
