    Vegetable and Chickpea Curry from Cooking Light
    Ingredients

    1 tablespoon olive oil
    1 1/2 cups chopped onion
    1 cup (1/4-inch-thick) slices carrot
    1 tablespoon curry powder
    1 teaspoon brown sugar
    1 teaspoon grated peeled fresh ginger
    2 garlic cloves, minced
    1 serrano chile, seeded and minced
    3 cups cooked chickpeas (garbanzo beans)
    1 1/2 cups cubed peeled baking potato
    1 cup diced green bell pepper
    1 cup (1-inch) cut green beans
    1/2 teaspoon salt
    1/4 teaspoon black pepper
    1/8 teaspoon ground red pepper
    1 (14.5-ounce) can diced tomatoes, undrained
    1 (14-ounce) can vegetable broth
    3 cups fresh baby spinach
    1 cup light coconut milk
    6 lemon wedges
    Preparation

    Heat oil in a large nonstick skillet over medium heat. Add onion and carrot; cover and cook 5 minutes or until tender. Add curry powder, sugar, ginger, garlic, and chile; cook 1 minute, stirring constantly.

    Place onion mixture in a 5-quart electric slow cooker. Stir in chickpeas and next 8 ingredients (through broth). Cover and cook on HIGH 6 hours or until vegetables are tender. Add spinach and coconut milk; stir until spinach wilts. Serve with lemon wedges.

    Not sure how healthy this one is, but it is soooo easy.

    5 ingredient beef stew

    1 lb beef stew meat (already cut into chunks)
    1 pkg beef stew seasoning packet
    1 pkg frozen vegetables for stew (has potatoes, celery, carrot and onion)
    1 can beef broth
    1 can golden cream of mushroom soup

    Coat the beef with the seasoning packet. Place meat, then the rest of the ingredients in the crockpot. Cook for 8-10 hours on low.

    I have this one saved on my crockpot only board at Pinterest.

    Crockpot Pizza Casserole

    Recipe type: Main Source: AllRecipes.com Prep time: 15 mins Cook time: 6 hours Total time: 6 hours 15 mins Serves: 6
    Ingredients
    1 Box (16 oz) Spiral Pasta (uncooked but rinsed)
    1 pound lean ground beef, turkey or chicken
    1 onion, chopped
    1 clove garlic, minced
    1 green bell pepper, chopped
    1 cup sliced pepperoni
    16 ounces pizza sauce or pasta sauce
    1/2 cup water
    1 cup shredded mozzarella cheese
    Instructions
    Spray a Large Crockpot (6qt or larger) with non-stick spray
    In a medium skillet over medium-high heat, brown the ground beef or chicken or turkey with the onion, garlic, pepperoni and green bell pepper. Drain any excess fat.
    Rinse pasta and place in the crockpot with drained ground meat mix. Stir. Pour pasta sauce and 1/2 cup water over noodle mix.
    Top with shredded mozzarella.
    Cover and cook on low for 5-6 hours (no not lift the lid).

    I did not read thru all the pages, so forgive me if this has already been said. Get the Fix it And Forget It! cookbooks!! They are all crock pot recipes and are very budget friendly and good stuff! I have had my book for about 10 years and it is one I pull out a few times a week and nothing I have ever made has not been good.

    I've been doing the crockpot cooking for years.. n my mom did it and my gramma's also. Even when i was a kid I remember mom or grama tossin' stuff in the crockpot in the begining of the day and we had grub after school

    when i can come up with ideas i do the same.

    Taco Soup

    2 cans beans....I use chili beans for the flavor
    1 can whole kernel corn, drained
    1 can cream corn
    1 can stewed tomatoes
    1 can rotel (can use 2 cans stewed tomatoes if trying to keep it nonspicy)
    1 pkg taco seasoning
    1 pound ground beef or turkey (I leave the meat out sometimes too and it's just as good)

    Mix together and cook on low all day.

    Serve with taco fixings over tortilla chips or by itself with just cheese and salsa. My kids have loved this for years. I cook in the crockpot all the time to save time, so I have all kinds of kid friendly dishes.....just let me know if you want more :)


    I made this one, but I added about 2 cups of water to it- the family LOVED it!!! Served with Juanita's chips and cheese, and mixed in a little FF sour cream for mine and the kids. big hit with the hubs!

    Salsa Chicken

    1 can of black beans (drained)
    1 can of corn (undrained)
    1 jar of salsa (I use Pace Mild)
    4-6 skinless boneless chicken breasts

    Throw all the ingredients in the crockpot and cook on low for 6 hours. Once cooked shred chicken and serve over rice or on tortillas shells or tortilla chips for burritos or nachos. I also offer some shredded cheddar cheese (fat free for me) and lettuce. Very easy and my two preschoolers love it.

    Crock Pot Meatloaf

    2 lbs. ground beef (I use ground turkey)
    3/4 c milk (I use skim)
    3/4 breadcrumbs (I use Italian flavored breadcrumbs)
    2 eggs
    1 Package Lipton Beefy Onion Soup Mix (not prepared)

    Combine all ingredients, shape into a loaf and cook in crock pot on low for 4-6 hours. I line my crock pot with aluminim foil and place the loaf on top. Makes for easy cleanup.

    This sounds really good. I'm gonna try it this weekend!
